  • Alpesa Blanca. Como dice en el empaque, su color es blanco, más que otras. Es muy amable, con el punto de acidez bajo (casi no se nota) y bastante neutra. Lleva mostaza, cebolla en polvo y páprika.
  • Alpesa limón. Se le siente un sabor casero “alimonado”, habría que revisar el punto de acidez.
  • Bell’s. De color crema, en boca se siente mucho el sabor a huevo.
  • Cuisine & Co. Es de un sabor un poco más suave, neutral, como para ser utilizada en sánguches.
  • Kraft. El color es mucho más blanco y la textura es muy firme.
  • Libby’s. Su color tiende al rosado, con un sabor amargo al final. En la mezcla de especias tiene pimienta.
  • Ricasa. Tiene buena textura y color muy marcado. Tiene un punto de ácido más alto que las otras y ese sabor se mantiene en la boca. Esto se deba a que usan sabor a mayonesa.
  • Tottus. En boca se percibe un poco más aceitosa (se siente sabor a aceite de soya) y a la vista es un poco más rojiza (utiliza colorantes naturales, como la cúrcuma y el achiote).
  • Walibi. Tiene buen sabor, pero el punto dulce muy alto.

Revisando los anaqueles de supermercados, conseguimos algunas mayonesas con sabor añadido. Incluimos a continuación algunos de los sabores que conseguimos. En general, notamos que los colores son intensos y los sabores (muchos artificiales) bien marcados.

Cata de Salsas. Un mundo de sabores en mayonesa.
  • Terraza Grill. Sabor de pollo a la brasa. Tiene el sabor característico y es un producto que los amantes del pollo a la brasa podrían llevar en la maleta si van de viaje por el mundo. También probamos la versión con sabor a tocino, pero era demasiado intenso y la consistencia densa, bastante invasiva.
  • Mayopalta Walibi. Marcado sabor a palta. Tiene un porcentaje de aceite de palta y esencia de la misma fruta, además de perejil, cebolla y limón.
  • Mayo Queso Tottus. El sabor a queso está muy marcado, tanto que no sabe a mayonesa sino a queso tipo americano como para dippear nachos.
  • Legovic Acevichada. Es una mayonesa con sabores bien logrados. En la fórmula hay salsa de soya, sabor a pescado, condimento ligeramente picante y ajo. En la emulsión tiene puntos de vegetales. Además, probamos de esta marca la Acevichada Picante, con un color más rojizo, buena textura y un punto de picante adicional debido a la incorporación de rocoto.
  • Cuisine & Co. Acevichada. A la fórmula base de mayonesa le añaden ají limo, jugo de limón, polvo de cebolla, caldo de pescado y mariscos y ajo. El sabor es un poco dulce.
  • Adelmi Acevichada. El color es oscuro. Tiene buen balance de acidez y un retrogusto marcado. La fórmula incluye sabor a pescado, cebolla y ajo en polvo, hongos shitake y alga kombu.

KETCHUP

La salsa de tomate que conocemos hoy como kétchup tiene una historia que se origina en Asia. Como salsa para acompañar el pescado, viajó a Inglaterra y se convirtió en una fórmula hecha a base de hongos, hasta que en 1896 el estadounidense Henry J. Heinz lanzó una versión con tomate en una etiqueta que decía “cátsup”. Es característico de esta salsa su sabor agridulce producto de la combinación de pasta de tomate con vinagre, sal y especias. Debe tener un color rojo oscuro y un balance entre el dulzor del tomate y la acidez del vinagre.

Cata de Salsas. El ketchup Heiz es un sabor familiar y reconocible.

EL TOP 3

  1. Heinz. Tiene un buen color natural (no contiene colorantes), la textura correcta y balance entre dulzor, acidez y especias. Es un sabor familiar y reconocible.
  2. Alacena. El sabor es balanceado, el color y textura correctos. De las tres marcas en el top, es la única producida en el país.
  3. Hellmann’s. El sabor es balanceado, el color no es ni tan claro ni tan oscuro y el dulzor está controlado.

También probamos (organizadas en orden alfabético)

Cata de Salsas. Un ketchup debe tener un color rojo oscuro y un balance entre el dulzor del tomate y la acidez del vinagre.
  • Bell’s. El color es rojo brillante, tiene el punto de dulce alto.
  • Cuisine & Co. De sabor está bien, pero la textura está muy densa.
  • Del Monte. Se siente espesa, como pasta de tomate y tiene sabor dulce.
  • Fresh Market. La textura es un poco más suelta y el color oscuro.
  • Hunt’s. El color es oscuro y su sabor es muy amargo.
  • Libby’s. El color es más rojizo, la textura es un poco más suelta y le notamos una nota amarga.
  • Ricasa. Se le dispara mucho la acidez.
  • Tottus. De color más oscuro. El sabor es menos dulce y bien especiado: en la fórmula tiene canela y clavo de olor, además de vinagre de vino. Tiene un retrogusto un poco amargo.

MOSTAZA AMERICANA

El producto que conocemos como mostaza americana es un condimento común en Estados Unidos. Elaborada con los granos de mostaza amarilla menos picantes y una elevada proporción de vinagre, es una salsa muy suave y de color amarillo brillante por la inclusión de cúrcuma en polvo. Fue introducida en el mercado en 1904 por George J. French como «mostaza en crema para ensaladas». Se utiliza habitualmente para acompañar hot dogs, pretzels y hamburguesas. Su color debe ser amarillo tirando hacia lo opaco y debe tener una textura sedosa al paladar. Al ser una mezcla de polvo y vinagre, es posible que ambos elementos se separen un poco, pero la presencia de ese líquido no indica que está malograda. Eso sí, no debería ser aceitosa ni traslúcida.

EL TOP 2

  1. Alacena. No pudimos dejar de dippearla. La acidez y el amargor están bien balanceados, así como su textura y color. Tiene una fórmula clásica con un punto de dulce. Al revisar los ingredientes vimos que se trata de sucralosa (splenda).
  2. Cuisine & Co Mi Mostaza. Pareciera ser un poco neutra. El color en más brillante, sin embargo, es una de las que no pasó desapercibida. Revisando los ingredientes notamos que es una mezcla de dos mostazas: una clásica con especias como canela, pimienta y kion, y otra “macerada” con ajo, cebolla y harina de trigo, lo que la hace tener gluten.
Cata de Salsas. Estos fueron los primeros puestos en mostazas y ketchups.

También probamos (organizadas en orden alfabético)

  • American Classic. Una mostaza con buen color, pero de sabor muy amargo.
  • Bell’s. El color estaba bien, la textura un poco más suelta y el sabor muy suave.
  • Heinz. Una fórmula balanceada con la acidez y el amargor justo.
  • Libby’s. La textura es un poco suelta y el sabor es suave.
  • Ricasa. De color oscuro y buen sabor, pero un poco densa.
  • Tottus. Su sabor es intenso y tiene una acidez controlada.

UNA BUENA COMPAÑÍA

Para acompañar esta cata elegimos una cerveza refrescante, la Servus Lager, de cuerpo ligero que nos ayuda a mantener limpio el paladar. Además de sumó la IPA. Con el balance perfecto de cuerpo y aroma, es una cerveza artesanal de 100% cebada malteada con lúpulos alemanes que refresca muy bien en estos días de calor. Funciona perfecto como acompañante de picadas y parrillas.

Cata de Salsas. EN esta oportunidad catamos con papas nativas y nos refrescamos con cerveza artesanal Servus.

ADVERTENCIA. Consumir en exceso productos procesados o ultraprocesados puede ser dañino para la salud. Estén atentos a los octógonos y revisen siempre las etiquetas para informarse sobre los ingredientes utilizados en cada preparación.
