Me di cuenta especialmente de que, en Lima, si las personas tenían éxito con la comida callejera, realmente podían salir de una situación vulnerable. La gente incluso puede hacerse famosa. Un ejemplo de eso son los Anticuchos de Doña Pochita. También hay muchas diferencias en la comida callejera en toda América Latina. Por ejemplo, en Buenos Aires no les gusta la comida picante, o en La Paz no hay cebiche, aunque obtienen algo de pescado del lago Titicaca. Cada lugar al que fui tenía gustos y sabores únicos dictados significativamente por su entorno, la cultura local y la historia de la ciudad. En toda América Latina puedes probar una parte de la historia de la ciudad mediante su comida de la calle. Algo único sobre Lima es cómo se documentó la comida callejera en el siglo XIX en escritos europeos y las pinturas de Pancho Fierro, quien pintó vendedores ambulantes a mediados del siglo XIX, incluidos la anticuchera y el vendedor de mazamorra. Es fascinante cómo estos platos todavía existen en las calles casi 200 años después.

Que hay tantas historias notables en Lima y tuvimos que limitar el capítulo a un cocinero principal y otros tres que representan a la ciudad. No faltaron historias increíbles, personas y comida para elegir en Lima. Hubo tanto que quise capturar. En todo caso, el mayor desafío fue decidir qué presentar, ya que solo teníamos cinco días para filmar y Street Food es un espectáculo de 30 minutos. Estoy muy contenta con los resultados finales y creo que pintan una imagen diversa de la ciudad. Durante el rodaje hicimos entrevistas con expertos y cocineros, filmamos a las leyendas de la comida callejera creando sus platos y vendiéndolos, su día a día y la ciudad. La ciudad en sí es como el quinto personaje de la historia, queremos que cobre vida para el público, especialmente porque muchos de los espectadores nunca han viajado a Lima.
¿Cuáles fueron los mejores momentos del proceso de filmación? Comer (risas). Bueno… uno de los mejores. La comida fue fantástica. Pero, la mejor parte de la filmación fue trabajar con los lugareños. Me encantó hacer todas las entrevistas con los expertos y los vendedores ambulantes de comida. Especialmente Toshi (Tomás Matsufuji). Tiene un talento increíble, pero es muy humilde y divertido. Es muy divertido de entrevistar y filmar. Hizo reír a todo el equipo y fue una alegría estar con él. Realmente es único. Estoy emocionada porque el mundo va a conocer su historia pronto.

¿Cómo te das cuenta: este es el personaje principal del episodio, por ejemplo en el caso de Lima? No fue fácil elegir el personaje principal en Lima. Había muchas buenas opciones. Pero, la historia de Toshi es verdaderamente única y estaba dispuesto a abrirse y compartir su vida. El combinado de Toshi con cebiche, pota y arroz con mariscos tenía sabores únicos y deliciosos que no había probado antes. Pero él es mucho más que su gran comida y talento. Hay muchos cocineros de comida callejera que tienen historias sobre la venta de comida en la calle para salir de la pobreza. La mayoría de las veces su objetivo es tener un restaurante más grande. ¿Podemos hablar un poco más sobre los personajes en Lima? ¿Tal vez un adelanto? Más allá de que todos ellos preparaban comida deliciosa que representaba la cultura limeña y peruana… Doña Pochita: me inspira su filantropía; ella luchó durante toda su juventud y ahora devuelve a la comunidad. María y Pablo de Picarones Mary: tienen una historia de amor tan dulce. Angélica de Huerta-Chinén: encarna la fuerza; los médicos le dijeron que no podría caminar y, sin embargo, lo sigue haciendo y de pie todo el día. Toshi: es muy talentoso, humilde, divertido y simplemente un gran tipo. Espero que se gane el corazón de las personas en todo el Perú y el mundo.
STREET FOOD LATIN AMERICA: TAMARA ROSENFELD, DIRECTOR, SPEAKS ABOUT THE RESEARCHING AND FILMING PROCESS
Street Food Latin America premieres tomorrow, July 21, on Netflix. Just before July 28. Right in the middle of a pandemic in which our street cooks have been tremendously affected. The stories, filmed just under a year ago, are strong and real, reflect our culture and traditions at the table, and are key to understand that beauty and resilience that distinguish us as a region. Tamara Rosenfeld, director (Lima, Buenos Aires, La Paz), has been able to capture the essence of each character and, although as she says, the choice has not been easy, each chapter is a reminder of how important this sector of our cuisine is for gastronomy.
Why did you decide to film in Lima in the first place? Once we knew we would be filming in Latin America, it was only natural to feature Lima as one of the cities. The food of Peru has become legendary around the globe; however, foreigners are more aware of the high-end cuisine. It was exciting to come to Lima to document the lesser-known, but just as important to Peruvian food culture, street food.
What was your idea of the city before coming? Before visiting Lima, I had done a good amount of research. I knew it was a sprawling city on the coast known for its cuisine. While I expected to eat well, I didn’t realize it would be as delicious as it was. I didn’t realize how passionate Peruvians are about their food before visiting Lima. When talking to locals it became very clear quickly how much people love their Peruvian food. This passion and love for their local food were exciting. I saw locals planning out their days around food and where to eat. I loved it. Before arriving in Lima I didn’t realize that the sky was gray so often, but during the film shoot thankfully we had some sunny days.
How did the process start? Once the Latin America season was greenlit by Netflix, we started by working with local experts to find out about the street food scenes and potential cooks to highlight. Then we worked specifically with local talent consultants who are food experts and gather lists of the street food legends for a particular city. In Lima our talent consultant was you. During the research phase, we continued to speak with many experts to get a holistic sense of the city, the culture, the history, and the street food scene.
How did the research process work? We work closely with local experts to find some of the top candidates for the local street food heroes we would like to highlight. We go to the city to scout before the shoot and during that process, we meet all the potential street food chefs, and of course, try their food. At this point we know that their food is celebrated and would be worthy of sharing, from there it’s about getting to know who the street food cook is as a person. We interview them in-depth to learn about their stories. It is important for us to find the main character who will be open about sharing their life, including their struggles and challenges, so they must be willing to be vulnerable. We also want to make sure we tell diverse stories throughout each episode and within the season. We aim to show an authentic view of the city and the life of the street food cooks. Our goal is to create something that both locals and foreigners will enjoy and to have the viewer better understand the street food scene of the city.
Did you expect to find the same amount of street food in Lima than in the rest of the countries in Latino America? There’s quite a diversity of how much street food there is in different cities around Latin America and each city experiences street food in a slightly different cultural context. In La Paz, there is street food on about every corner. In Buenos Aires, street food is more often served at football matches, markets, and fairs. In Lima, there is street food throughout different sections of the city, however, street food used to be more abundant prior to government regulations. Vendors got kicked off the streets and are starting to move inside. Hopefully, this show will inspire people to celebrate street food and support their local street food cooks.
What are the main differences and the biggest links between the street food of the countries you visited in Latam? Street food in every country is a way to keep traditions alive. Everywhere I have been in Latin America, or around the world, the food on the street is where cultural heritage gets passed down. It is also a place where people can innovate and have the opportunity to bring themselves up in the world. I especially noticed that in Lima, if people were successful from street food they could really pull themselves up out of poverty. People can even become famous. An example of that is Doña Pochita’s Anticuchos. There are also a lot of differences in street food throughout Latin America. For example, in Buenos Aires, they don’t like spicy food, or in La Paz, there isn’t cebiche, though they do get some fish from Lake Titicaca. Every place I went to had unique tastes and flavors that were dictated significantly by their surrounding environment, the local culture, and the history of the city. In all of Latin America, you can taste a part of the history of the city through the local street food. Something unique about Lima is how the street food was documented back in the 1800s through European writings and the paintings of Pancho Fierro. Pancho Fierro painted street vendors in the mid-1800s including the anticucho griller and the mazamorra seller. It is fascinating how these foods still exist in the streets today almost 200 years later.
What was the biggest challenge in the research process and also during the filming? The biggest challenge with the research is that there are so many great street food stories in Lima, and we needed to narrow it down to one main cook and three other cooks that represent the city. There was no shortage of amazing stories, people, and food to choose from in Lima. There is so much I wanted to capture. If anything, the biggest challenge was distilling what to feature since we only have five days to shoot and Street Food is a 30 minutes show. I am really happy about who we chose to highlight and I think it paints a diverse picture of the city. During that fives day film shoot, we did interviews with experts and the street food cooks, we filmed all the street food legends creating their dishes and selling them, we filmed the main subject in their daily life, and we filmed the city. The city itself is like the 5th character in the story. We want the city to come to life for the audience, especially since many viewers have never traveled to Lima.
What were the best moments of the filming process? The best moments were eating the food (laugh). Well…one of the best. The food was fantastic. But, the best part of filming was working with the locals. I loved doing all the interviews with the experts and the street food vendors. Especially Toshi (Tomás Matsufuji). He has such amazing talent, yet is so humble and funny. He is so much fun to interview and film. He made the whole crew laugh and was such a joy to be around. He really is one of a kind. I am excited that the world will get to see his story soon.
What about the Lima episodes, which kind of characters were you looking for? We always look for people who are going to be open about their lives and have a story to tell. We are aware that the cooks we choose to highlight are representing the city, so we want to be thoughtful and work with the locals to make sure we choose good candidates.
How did you end up choosing the main character of the Lima episode? It wasn’t easy to choose the main character in Lima. There were many great options. But, Toshi’s story is truly unique and he was willing to open up and share his life. Toshi’s combinado with cebiche, giant calamari (pota), & seafood fried rice had unique and delicious flavors I hadn’t tasted before. But it is a lot more than his great food and talent. You see, there are many street food cooks who have stories about selling food on the street to pull themselves out of poverty. Most of the time their goal is to have a bigger restaurant. Toshi is the opposite. He wanted to size down. He is one of a kind. He is a local legend and has a unique story. For example, he got his PhD in chemistry and cooks in his small hole-in-the-wall stall, Al Toke Pez. Once you see the episode I think you will understand why he is such a great person to highlight. I don’t want to give away too much here.
After all the traveling and the filming, how important do you think is the street food for the gastronomy industry in Latino America, especially in Lima? I think street food is a key part of our cities, in keeping our cultures alive, and connecting people of all classes. Street food supports keeping the local traditions and customs alive. It is a place where people from all walks of life can come together and connect over the delicious dishes.
Netflix is launching the episodes during the pandemic, and also before our Independence Day, this is a hard time for us, but also a powerful reminder that our people are strong and are willing to start the recovery process. Did you feel that strength during each interview one year ago? I certainly noticed there is a lot of strength and resilience from the people of Lima. During this unprecedented time, vendors are facing challenges like never before with temporary closings, and uncertain futures. I hope that by sharing their stories and celebrating their work, viewers around the globe will see the immeasurable value these inspiring people bring to their community. I hope that people continue to support street food locally in Lima and around the globe. We hope that after watching Street Food, the viewers will consider supporting street food vendors in their own communities so that we can continue to enjoy these incredible culinary traditions. During this time, it is easier to eat outside and take food to go. So hopefully the people and the government can work together to support the street food vendor community to recover and then thrive.
Can we talk a little bit more about the characters in Lima?Maybe a sneak peek? Beyond them all having delicious food that represented Lima and Peruvian culture…. Doña Pochita: I am inspired by her philanthropy. She struggled throughout her youth and now gives back to the community. María and Pablo of Picarones Mary: They have such a sweet love story. Angélica of Huerta-Chinén: She embodies strength. Doctors told her she wouldn’t be able to walk and yet she continues to work on her feet all day. Toshi: He is so talented, humble, funny, and just a great guy. I hope he wins over the heart of the people around Peru, and around the world.
