Nació como un proyecto de dark kitchen, pero en poco tiempo Rossa abrió un espacio para atender al público in situ, con el chef José Luis Saume al frente. Pizzas y platos de vena italiana delicadamente presentados forman parte de su menú.
Rossa Pizza Appassionata nació bajo la sobra de Troppo, como una manera de vender pizzas por delivery en tiempos de pandemia sin afectar la marca del restaurante, de corte más clásico y mantel largo. Lo que nadie esperaba era que, en poco tiempo, ameritó su propio espacio, en sus propios términos, con sus propios cocineros, que en principio tenían un creador común. Un giro del destino o la sincronicidad puso al chef José Luis Saume al frente de la cocina, como él bien expresa, “la volví mía”.
La primera palabra que describe a Rossa es pizzería, porque nació con esa impronta, la de ofrecer incluso las variedades más atrevidas, menos conocidas o relajadas, alejada de la carta de los clásicos de Troppo. A lo que se sumaron, con la llegada de Saume, platos inspirados en la culinaria del sur italiano, coloridos, de esos que abren el apetito, elaborados con buen producto, que, si bien entran en la categoría de comida “confortable”, demuestran que también puede ser bonita, delicada y creativa.
El concepto de Rossa tiene una instrucción simple y directa: comer rico y sentir que uno sale de ahí con el corazón contento. Si bien la pizza es la raíz de la propuesta, la hacen con masa delgada y crujiente, Saume cuenta que cuando vio el local le dijo a los dueños que un espacio de ese tipo merecía mucho más, y les propuso enriquecer la carta con más opciones.
El menú discretamente cuenta con la masa de pizza como hilo conductor, entonces la preparan frita en forma de donuts, panes para acompañar la stracciatella o el vitello tonnato, piadinas, incluso sirven sticks con mousse de chocolate. La carta cuenta con nueve pizzas numeradas, por lo que la primera recomendación es preguntar por la #6 con hogos rostizados, cebollas caramelizadas y nueces, la #12 con chorizo picante, jalapeños, miel y albahaca y la #18 con espárragos salteados, radicchio, kale y balsámico. Todas tienen harto queso mozzarella y algunas, además, grana padano.
TODO COMENZÓ COMO UN DARK KITCHEN
En Rossa las pizzas que inicialmente fueron diseñadas por el chef Mattia Bomper, como parte de un concepto de dark kitchen, rápidamente ofrecieron la posibilidad de un espacio que permitiera atender al público in situ. Entonces, tal como cuenta André Bordarampé, uno de las cabecillas vinculados al proyecto, “empezamos a buscar hasta que encontramos lo que era una tienda de zapatos y solo insistí que la entrada estuviera en la calle Choquehuanca y no por el lado de Conquistadores, donde hay mucho más tráfico”.
Casi en paralelo, cuando el proyecto ya estaba encaminado con una primera carta elaborada, en la misma época, José Luis Saume intempestivamente salió de las filas del restaurante Mérito, lo que le había dado visibilidad a su trabajo en Lima. Lo cierto es que dos días después del colgar el mandil en Barranco, ya formaba parte de las filas de Troppo y en poco tiempo surgió la oferta de estar al frente de Rossa.
Saume, formado en Caracas, es nieto de un napolitano que llegó a Venezuela después de la Segunda Guerra Mundial, quien cruzó el Atlántico con las recetas que formaban parte del menú diario familiar. El chef ha trabajado en restaurantes caraqueños de prestigio como Alto, Malabar (el de Caracas), Planta Baja, además de un paso de tres años por Chile. Luego emigró a Florida, Estados Unidos, donde estuvo al frente de un restaurante de cocina italiana, hasta que apareció ese proyecto irresistible que lo trajo a Lima.

La carta de Rossa es corta, resaltan las ensaladas, especialmente, la cítrica con mézclum de lechugas, naranja, toronja, ricota y polvo de pistacho. También la tibia de tomates, que consiste en una mozzarella en carroza, en decir empanizada y frita, que sirven con tomatitos cherry y arúgula con una fresca vinagreta, que puede encontrar un acompañante perfecto en una copa de vino blanco. Destacan las melanzane alla parmigiana, berenjenas bebé con salsa pomodoro gratinadas con quesos mozzarella y grana padano. Uno de las opciones más creativas del menú son los donuts salados, una versión de la pizza frita que se sirve con queso stracciatella o lo cacio e pepe, es decir, con mucho pecorino y pimienta.
LA SAZÓN DEL NONNO
Saume dice que se siente muy contento con este proyecto que le ha permitido “de cierta forma” volver a sus inicios, y que en algún momento dejó porque pensaba que no era una cocina creativa o rompedora, cosa que siente que hizo en su paso por Mérito. “Ha sido un ciclo que me trajo a un punto donde condenso todo lo aprendido. Rossa es el resultado de una trayectoria donde sin importar el formato, puedo hacer una cocina con mucha creatividad, delicada, rica en detalles que hable mucho de mí”, expresa.
Entre los platos de fondo tres recomendaciones: la milanesa de pollo acompañada con una ensalada de lechugas salteadas, balsámico y salsa marinara; la baguette rellena de mozzarella fior di latte con crema de pecorino coronada con prosciutto y el mac & cheese cacio e pepe, cuya presentación es divertida.
Para el cierre, la carta de postres es corta, hay tiramisú, sticks de pizza con mousse de chocolate, pero el mejor cierre son los struffoli, que palabras-más-palabras-menos- son bolitas de masa frita, que en su versión original se preparan en el sur de Italia para la Semana Santa y se bañan con miel. En este caso, se mezclan con arándanos fresco, se sirven sobre helado con mermelada de frutos rojos y coronan con pétalos de flores de manzanilla. El lugar es iluminado, amplio, informal, bien atendido y los precios están en el rango de la zona de San Isidro. En las noches, se abre la barra donde bien vale entrarle al piqueo con un sabroso cóctel. En Calle Choquehuanca 601, San Isidro.
