Reza un principio que cuando el discípulo está preparado aparece el maestro. En el caso de Pía León, Kjolle llegó cuando la chef estaba lista. Imposible desligarlos, referirse al uno sin la otra, porque los platos, la estética, la puesta en escena, los sabores, todo, absolutamente todo, son el reflejo del momento que vive su autora. Porque Kjolle es eso, un restaurante de cocina de autor que se sirve de una despensa diversa y en constante redescubrimiento, en un país donde la gastronomía es eje del día a día y su orgullo. Y que a pesar de la pandemia, no ha parado de crecer. Con cenas a varias manos, impulsando a jóvenes chefs para cocinar en conjunto, con cocineros del mundo unidos en un solo espacio y menú. En estos tiempos Kjolle fue el epicentro de la movilidad y el cambio, de la actividad constante y de la fortaleza que emana de su chef que hoy se hace de un premio que busca realzar a las mujeres cocineras, ya que la mayoría de los restaurantes que gozan de reconocimiento a nivel mundial están dirigidos por hombres. Sí, aún pasa, y si lo dudan, pues un paseo por las principales listas del mundo (y portadas de revistas) no les vendría mal. Hoy celebramos, en tiempos complejos, una alegría culinaria que nos regala, gracias a su esfuerzo, trabajo y oportunidad de visibilización, una de las mejores del mundo.
Los platos son delicados, coloridos, confortables y juguetones. A ratos, el menú sorprende, pero también da descansos y pasea al comensal por lugares y sabores comunes. Reflejan la acción de una chef que disfruta su potencial. Tal vez uno de los que más lo expresa es Muchos Tubérculos, una tartaleta rellena con olluco y papas (o con lo que la temporada mande) que ya se convirtió en un clásico y echa mano de ingredientes conocidos y cotidianos. Lo interesante está en la combinación y en la puesta en escena, donde los colores, la forma y sacar lo mejor de cada insumo brinda otra acepción: se convertirse en un plato donde León expresa, en primera persona, una delicadeza conmovedora.
Pía León fue nombrada anteriormente Latin America’s Best Female Chef 2018, dentro de una serie de premios que reconoce el talento para tomar conciencia sobre la disparidad de género en el sector de la restauración. Ahora se hace del The World’s Best Female Chef 2021, patrocinado por Nude Glass. Este año el premio es más relevante ya que el panorama de la restauración sigue sufriendo una disparidad generalizada y la cocina de Pía busca la inclusión de todas las personas cualificadas, independientemente de su género. El premio The World’s Best Female Chef forma parte del próximo programa de The World’s 50 Best Restaurants 2021, patrocinado por S.Pellegrino y Acqua Panna, y la ceremonia principal de entrega de premios tendrá lugar en Amberes, Flandes, en octubre de este año. El restuarante de Pía, Kjolle, recibió el premio Highest New Entry en la lista Latin America’s 50 Best Restaurants 2019 cuando, apenas 15 meses después de su apertura, debutó en el 21. Tras graduarse en Le Cordon Bleu en la capital peruana, la limeña comenzó su carrera entre los fogones de la ciudad. Después de ocupar un puesto en Central en 2009, ascendió hasta convertirse en su chef principal, junto con su ahora esposo Virgilio Martínez. En conjunto también abrieron Mil, en Moray (Cusco), restaurante y el centro de investigación, desarrollo e interpretación Mater Iniciativa dirigido por Malena Martínez. William Drew, director de contenido de The World’s 50 Best Restaurants, afirma: “Es un honor nombrar a Pía León. Su dedicación a la paridad de género en su cocina y su pasión por el uso de los ingredientes autóctonos de su país han establecido un punto de referencia para los demás. No dudamos de que su trabajo cambiará el futuro de la gastronomía y contribuirá a que más mujeres tengan éxito. Pía anota que: “Lo más positivo de estos momentos tan excepcionales y difíciles es que he podido seguir trabajando con un equipo de personas formidables. Ellos verán este premio, al igual que yo, como una gran señal de que vamos por el camino correcto de cara al futuro”.
LA SALA Y LA EXPERIENCIA
En una sala minimalista, de decoración casi frugal pero colorida, los platos se destacan, brillan, seducen al comensal. Cuando afinen la vista caerán en cuenta, con inusitado agrado, que la de Pía León es una propuesta relativamente sencilla, sin salsas pesadas, ni juegos de química o combinaciones forzadas, donde hay mucho oficio y conocimiento. Reconocerán los ingredientes porque conservan mucho de su estado natural y esencia. Entonces, cuando llegue a la mesa el pan de maca (cambian los insumos constantemente) acompañado con una cremosa mantequilla de macambo (Teobromaprimo del cacao), empezará un viaje que muestra la otra cara de una despensa que creemos conocer.
Cada plato puede resumirse en una palabra. Por ejemplo, a la corvina y navajas con mashua negra, macre y delicadas rebanadas de nuez procedentes de Madre de Dios, le calza el vocablo “mar”. A los Muchos Tubérculos le corresponde la voz “tierra”; y a las conchas con pacae les viene el término “descubrimiento”, porque el uso delicado de la fruta ofrece registros de sabores que la sacan de ese grupo de productos que nos parecen simples, a los que no les prestamos mucha atención.
Pía León es chispeante, luminosa, contagia optimismo, pero a su vez no se relaja ni un minuto. Su atención está en todos lados, mira sin mirar, como si no se le escapara nada. Estuvo en la brigada del Restaurante Central por 10 años y, es compresible entonces, que las cocinas de Kjolle y la de Central están íntimamente unidas: pero cada quien tiene su espacio, su voz, su aporte y su manera de hacer las cosas. Tal vez eso ha sido una de las cosas más complicadas para ella, marcar distancia sin distanciarse. Que estén juntos, pero no revueltos.
En un menú de degustación de nueve platos no tendrán que esperar hasta el chancho para apreciar la propuesta de la chef. Cuando llegue a la mesa el cachete de cerdo con kiwicha, coliflor ahumada y salsa de cocona, sus paladares murmurarán la palabra “estupendo”, porque el cerdo está crujiente, jugoso e increíblemente delicado, un adjetivo que rara vez se le confiere. En el caso del asado de tira, lo mejor es la deliciosa textura del puré de maíz quemado, tal vez la espuma de macambo esté de más, pero la carne se deshace apenas toca la lengua.
DULCE LIMA Y KOMBUCHA
Dos postres que probamos en el tiempo en el que fuimos al menú de degustación, uno elaborado con chocolate de cacao Chuncho venido de Mil, combinado con chirimoya y miel amazónica. Pero lo mejor estuvo en la leche de lima, que consiste en una crema elaborada con leche de vaca y naranja agria, con mandarinas y tangelos frescos y ligeramente rostizados, sobre la que dispone una granita de mucílago de cacao, espolvoreado con cedrón. Aquí la palabra es “dicha”.
Un aparte especial para el trabajo que llevan en conjunto con Mater Iniciativa, que además de la comida se refleja en la bebida, cuya investigación los condujo a tener su propio vino con el nombre del restaurant, un Merlot elaborado especialmente por la bodega peruana Intipalka. La recomendación es pedir un maridaje mixto de bebidas con y sin alcohol, donde surgirán combuchas de maíz morado con pomarosa, infusiones de mamey con llantén y tomillo, aguas hechas con cortezas de huampo, incluso se dejará colar un destilado de la casa elaborado con Kjolle, esa flor andina con la que Pía dio nombre a su proyecto. Un viaje entrañable en un mundo en el que Pía da pasos en firme y en solitario.
