Hace poco más de un mes se celebró en Bogotá, Colombia, la ceremonia de los 50 Best Latam, lista que premia a los 50 mejores restaurantes de Latinoamérica. Perú se hizo, por sexta vez consecutiva, del primer puesto. Maido, con el chef Mitsuharu Tsumura a la cabeza, fue el número uno por segundo año; y Central de Virgilio Martínez y Pía León quedó en segundo lugar. Siete restaurantes peruanos más integraron la selección. Punto para Perú, ciertamente. Pero también un llamado a la reflexión. El país que va puntero desde que se creó este premio para América Latina celebra y aplaude, pero aún no termina de enfocarse en la defensa de su territorio y de sus recursos. Los problemas de sostenibilidad crecen en lugar de reducirse, son estructurales y sabidos, y hacen peligrar toda esa riqueza por la cuál somos tan reconocidos.
Gastronomía, debemos entender, va más allá de sentarse en la mesa. Se expande a varias disciplinas que la atraviesan y que, con menos pasión, logran ver de manera fría que hay temas que tratar. La sostenibilidad, como mencionamos, es uno de ellos, pero no solo en el cuidado del mar o en el aprovechamiento y protección de recursos, sino también con el personal que trabaja en un restaurante, lo que al final hace que se construya el equipo que conduce a la excelencia. Es imposible que dejemos de vernos de manera individual como país, sin embargo, eventos como el 50 Best Latam también visibilizan la fortaleza gastronómica de la región. ¿Cómo nos ayuda a estar unidos?
Lo hablamos hace poco tiempo, cuando vinieron a cocinar los parrilleros argentinos a Casa Moreyra para una celebración por el 9 de Julio. Fue histórico trabajar juntos y esa fortaleza regional hay que plantarla sólida ante el mundo. El modelo peruano en cocina es importante, marca una pauta, es estar unidos, colaborar juntos, seguir un legado que marcaron cocineros como Humberto Sato, Bernardo Roca Rey, Cucho La Rosa, Teresa Izquierdo, Toshiro, Rosita Yimura. Un trabajo no muy visible que comienza incluso antes de Gastón Acurio.
Es apenas hace poco más de una década que comenzamos a entender la cocina peruana, a enorgullecernos de ella. Hubo que comenzar a comunicar. ¿Cómo le cuentas a un país lo que tiene?
Sus insumos, las historias de sus productores, su geografía, su potencial, todo estuvo siempre ahí. La alianza cocinero productor ayudó mucho. Gastón fue pieza fundamental para unir a la gente del rubro. Se crea Apega, nace Mistura, llegan los grandes cocineros del mundo y se quedan admirados de nuestra despensa. Nos pusimos en el mapa gastronómico mundial gracias a un trabajo en equipo. Por eso, además de lo individual es importante fortalecer la región y que se convierta en una ruta. Estamos en el medio, casi todo está a dos o tres horas de Lima, toca hacer que el turismo se extienda a más ciudades.
El gran problema sería el transporte: la geografía es compleja, los billetes de avión son caros y para vuelos internos, diferenciados (mucho más caros para los extranjeros).
Sí. Por ejemplo, viajar dentro de Asia y Europa es más económico. Si queremos desarrollar la región, las líneas aéreas tienen que tomar conciencia de que no puede ser impagable viajar dentro de Latinoamérica. El turismo va de la mano con muchas cosas. Podría incrementarse por volumen, pero no se logra porque la gente prefiere irse a otro continente; que es lindo, pero lo que siempre digo es «conoce tu barrio primero».
REDIRECCIONAR LA MIRADA
El Gran Mercado de Mistura abrió muchas puertas. Nos puso cara a cara con el productor. Se establecieron alianzas con cocineros. Ahora tocaría ver una segunda etapa, que se concrete aún más esa relación. ¿Cómo hacer para que esto no se quede ahí? ¿Para que el cocinero no pida una muestra gratis de papas nativas, se tome la foto, la suba en redes y no llame más al productor?
Comprarle directo al productor es lindo. Tener una gastronomía que se nutre de lo que tenemos alrededor es maravilloso. Pero Perú es un país bastante accidentado a nivel geográfico, la mayoría de insumos tiene que viajar mucho. Es muy romántico pensar que se puede lograr siempre. Por eso tienen que verse dos modelos de negocio en los que todos tienen que ganar. Mi sueño de siempre fue hacer un mercado regional de productores en Lima, pero esa idea tiene que ir de la mano con el sector público, para que los productores puedan almacenar y vender sus productos y que haya variedad. No es realista comprar directamente a un productor si no hay una estructura y una logística de por medio en la que se manejen adecuadamente los temas de transporte, almacenamiento, higiene y distribución hacia lo restaurantes. La mejor forma de que esto suceda es que se trabaje como cooperativa, de lo contrario no tienes acceso a préstamos, a dinero para invertir y adquirir infraestructura, producir de una mejor manera y más rápida.
¿Y el tema de los intermediarios?
No siempre los intermediarios son malos. Por ejemplo, para productos de la Amazonía. Sí, debe haber cierta distribución artesanal, pero si quieres lograr que los productos lleguen de manera sostenible al mundo, tienes que meterle tecnología. Quieras o no, sin contaminar, sin aprovecharse. Si se quieren frutas amazónicas, se tiene que trabajar con un concepto de empresa que realmente colabore con productores amazónicos de manera consciente y sostenible, que se encargue de la distribución.
Sostenible. Sostenible no es solo hablar de productos sino también de personas. Y de personal de restaurantes. Del buen trato y la motivación. ¿Cómo se desarrolla y aplica este sistema en Maido?
Es cierto. Se habla mucho de sustentabilidad en productos, usos, productores, pero no del factor humano que integra un restaurante. Hay que comenzar a manejar modelos de cocina más horizontales, que la gente participe más, que rote. La motivación viene también por la responsabilidad que das. Que todos participen de todo. Alguien de frituras y de guarniciones puede ser parte de creatividad y dar opiniones e involucrar a tu equipo. Es estimulante y, muy aparte de eso, hay que preocuparse por cosas como la cocina de personal. En Maido comemos juntos. Es muy importante que quien está en cocina entienda que nunca va a tener hambre porque siempre estará rodeado de alimentos: así no hayas almorzado, picaste todo el día; pero el de sala o servicio, si no le das un plato rico y sustancioso, no pues. Soy el primero que llego en la mañana a probar lo que se come, quién no quiere comer bien antes de empezar a trabajar. Tenemos gente que se dedica a hacer cocina de personal y que luego termina ascendiendo y pasa a cocina. Eso motiva.
El tema del descanso es también básico. Los horarios.
Y lo hemos planteado así. Acá todo se consulta y aplicamos democracia, ahora el personal descansa dos días y medio seguidos para que sea un descanso real. Tuvimos, eso sí, que dividir cocina con servicio porque a sala sí le conviene venir más seguido por la propina. Esa ya fue una decisión de cada uno.
Es necesario también crear canales seguros para que el personal hable si se siente agredido, para que las mujeres denuncien si sienten acoso. Situaciones que suceden mucho en cocina y que vemos mucho en la industria. ¿Cómo han establecido ustedes esa figura?
Somos 90 personas las que trabajamos en Maido y un 15% son mujeres. Se han determinado canales de comunicación directos, para que, si a alguien se le pasa la mano o hace una broma fuera de lugar, se puedan tomar las medidas correctivas. Lo hemos hechos ya varias veces y hemos sacado a gente que hemos querido mucho. Dentro del reglamento interno de trabajo está claro: no puede haber ningún tipo de acoso y la afectada tienen que ser quien lo cuente y denuncie. Y las instamos a hacerlo, lo hemos aconsejado. Es necesario que sientan que tienen las puertas abiertas y la confianza para hablar. Acá todos los chicos saben: basta que alguien te haga sentir incómodo de alguna manera (por cómo te mira o cómo se acerca a ti), eso ya es suficiente para que se tomen acciones.
¿Y que pasa con el comensal? ¿Ese al que se le pasa el trago, el graciosillo al que se le va la mano o se excede en palabras?
Lo saco del restaurante. Literal. Le faltan respeto a una de las chicas de sala, a la anfitriona o alguno de los chicos y se va. No pasa seguido, pero cuando ha sucedido la gente se ha disculpado mil veces y se ha ido tranquila. También suelo preguntar a la persona afectada para que ella o él decida que acción tomar. Esta es mi familia y nadie la toca. Mis decisiones no me hacen ni feliz ni no feliz, me hacen sentir que tomo la decisión correcta. La cuenta va por la casa y que se retiren.
EL MAR, SIEMPRE EL MAR
Vedas, denominaciones de origen (DO), denominaciones de origen protegidas (DOP), ¿estamos haciendo lo suficiente?
No. Podemos hacer algo desde la plataforma gastronómica para que el Estado entienda que tiene que comenzar a hacer DOP. El tema está estancado. Hasta lo que sé, no tenemos ni una papa nativa, ni ajíes, ni quinua protegida. Muy aparte del tema de patrimonio, es lo que te hace poder vender el producto al mundo de una manera mucho mas atractiva. Esto lo hemos hablado en mesas en el Ministerio de la Producción, porque hay muchas DO pendientes.
Específicamente en el tema de las vedas, ¿qué nos falta?
Imarpe tiene que abrir toda su información para uso y lectura de las personas. Si vas a sentenciar una veda hay que ser más específico, el litoral es muy amplio: por qué se pone la veda, en qué parte o sector. Falta compartir datos y el público no está informado, como por ejemplo con lo que pasó con el pejerrey o el bonito y la pesca exploratoria. Deberíamos tener veda de todo y por mucho más de tres meses.
¿El problema entonces es el manejo de las vedas y de la información?
Sí. Nosotros tenemos mapeado los muelles y puertos legales, pero la cantidad de desembarques ilegales que existe es grande. Te vas a El Ñuro y a 50 metros hay un muelle que no está fiscalizado y pasa la mercancía. Hay mucho incluso que no llega a tierra porque los buques cargan en el mar y se van. Entonces, de qué vale hacer leyes si no se aplican. El mar es muy grande y no tenemos suficientes deslizadores rápidos para hacer las intervenciones correctas a las embarcaciones. Hay gente que pesca de una manera ilegal en embarcaciones de más de 20 toneladas y a menos de cinco millas del territorio. He denunciado un montón de veces. El tema de la pesca y las artes de pesca ilegales afecta también, entonces qué hacemos hablando de vedas si hay final hay gente que mete dinamita al agua y y mata todo, lo que está y no está en veda. ¿Cómo controlamos esto?
¿Hay algún viso de solución?
Como no tenemos la solución en el mar, o todavía no la encontramos; ataquemos en tierra. ¿Qué tan complicado es fiscalizar y colocar multas en mercados y supermercados? Cortar la entrada de productos en veda o que no alcanzan talla mínima. Atacar el canal de distribución de productos que no deberían estar a la venta. Todo suma, las veda, las áreas protegidas, pero, ¿dónde está la fiscalización? Mi pregunta es: ¿no van a hacer nada? Por ejemplo, se debería de prohibir la mixtura de mariscos, que no ves lo que tiene dentro ya que todo viene cortado. Ahora, también hay pescadores que ya cambiaron su forma de ver las cosas y defienden sus espacios. Eso es bueno y también ayuda, pero lo claro es que ningún supermercado del Perú, mercado o terminal debería tener productos fuera de talla o en veda.
