Con la ley de rotulados en plena vigencia, se inaugura en Perú el primer minimarket libre de octógonos. Y tras una recorrida, bueno o malo resultaron categorías imprecisas para narrar lo que allí sucede. Amplio, completamente aséptico y prolijo; Bivo Market Saludable está repleto de paquetes, pero carece de los alimentos que nunca han tenido octógonos ni tendrán, los de verdad, esos que abundan en los mercados de un país famoso en el mundo por su culinaria.

 

¿Han visto The Stepford Wives? En esta película de ciencia ficción/comedia negra dirigida por Frank Oz y protagonizada por Nicole Kidman y Glenn Close hay una escena en la que los actores caminan por un supermercado con amplios pasillos, impecables, con luz blanca intensa, todo ordenado y perfecto, mientras hacen la compra mensual en sus carretillas de acero brillante. Entrar a Bivo Market Saludable provoca la misma sensación, solo que en versión pequeña: la de lo estandarizado, esterilizado, sin corazón. Restaurantes, tiendas de ropa, cafés y hasta nuevos mercados de comida al paso (estilo patios de comida con terrazas), se sucedían uno tras otro, convirtiéndola en un espacio de gran actividad y tránsito, flanqueado por el Bosque El Olivar y el Club El Golf. Así de exclusiva es la zona. La covid 19 hizo que hoy esta avenida se vea prácticamente desolada con carteles de se alquita o se vende en todas las calles. Solo el paso de los autos y transporte público la animan. Ahí se mantienen algunos negocios de barrio de toda la vida, han abierto algunas bodegas de bienes de primera necesidad, y sobrevive algún restaurante o cafetería, sobre todo de esas de cadenas rápidas que cuentan con grandes espaldas. Es precisamente en medio de la Av. Conquistadores donde el bar que compraron los hermanos Novoa se convirtió en Bivo Market Saludable.

 

Enseguida entendieron que el proyecto tenía que distinguirse y tener un diferencial. Por el lado del márketing esto es básico, de lo contrario pasa a ser uno más del montón de los tantos espacios saludables, orgánicos o gourmets que puebla Lima. Entonces, con la Ley de Promoción de la Alimentación saludable en plena vigencia, los Novoa hicieron de Bivo el primer minimarket peruano libre de octógonos. Un nicho algo radical e inexplorado en el país, que asegura promover la alimentación saludable y orientar al público a pensar un poco más en lo que come. Ahora bien, que un producto no tenga octógonos en Perú no significa siempre que sea saludable, ya que la ley en una primera etapa ha sido un tanto permisiva en lo que se refiere a las cantidades aceptables de azúcar, sodio y grasas saturadas y trans. Pero, al menos, marca un camino.

 

En los anaqueles de la tienda Bivo se intercalan quinua envasada de distintas marcas, como la Tiyapuy, que proviene de un emprendimiento ayacuchano que incluye entre sus productos también papas chips elaboradas solo con papas nativas, sal de Maras y aceite de girasol, y pasta de quinua. Además, avenas y granolas artesanales fortificadas con maca andina Huella Verde del chef Germán Roz; los polvos de Ecoandino, como el de lúcuma, hecho con insumos orgánicos (lúcuma quinua, maíz nativo, algarrobo y canela); y el famoso sustituto del azúcar Lakanto, elaborado con extracto de fruta del monje o monk fruit y eritritol, además de sus derivados.

 

Sin aromas ni ruido, este local donde todo está empaquetado contrasta con los mercados de barrio y sus puestos bullangueros que, aun en pandemia, se suceden, alborotados, uno tras otro. Entrar en un mercado tradicional peruano es despertar los sentidos y ver crecer los antojos. El que más frecuentemente visito es Lobatón, en el distrito de Lince, contiguo a San Isidro, donde se entremezcla una prolífica zona comercial con residencias de clase media acostumbrada a la compra semanal o diaria. Su arquitectura se diversifica en cada esquina: edificios contemporáneos se intercalan con casas de antaño y quintas que se resisten, encantadoras, al cemento de la modernidad. La identidad de este barrio se refleja en su mercado más grande, que ocupa toda una manzana (cada cuadra o calle son 100 metros), rodeado de tiendas aledañas que venden frutos secos, flores, artilugios para repostería, frutas, ropa y de todo un poco. Presidiendo la puerta principal, una virgen rodeada de flores frescas y luego los pasadizos y su mezcla estímulos: el de comida preparada con oferta de menús caseros y cebiche, el de desayunos al paso que vende jugos hechos al instante, los de vegetales frescos, abarrotes, carnes e interiores y el fascinante pasadizo de pescados, donde cada sábado iba con mi papa cuando era chica a comprar la pesca del día.

 

La diferencia es sensorial, gastronómica: en un lugar se siente la temporada de fresa o piña, el olor del mango te golpea en la cara y sabes que ya es verano o los choclos tiernos que llegan Cusco se venden por manos (manojos de cinco). Y acá es donde comenzaron los debates: los chocolateros artesanales saltaron cuando sus productos tenían que llevar las etiquetas a pesar de ser orgánicos y estar hechos con cacao de origen; mientras que las golosinas con sabor a chocolate en empaques pequeñossalían bien libradas del entuerto. Cacaosuyo y Maraná Chocolates premiados en todo el mundo con sellos y  Sublime o Winter´s, golosinas sin cacao, no.

 

En Bivo también hay salpicados algunos productos que, con los ajustes a la ley que se vienen para setiembre, tendrán que regularse si exceden las cantidades permitidas de grasas y sodio. Por el momento, los Mamalama (los de quinua tienen arroz integral, quinua, aceite de girasol, sal de Maras y queso cheddar en polvo) y las Veggie Chips cumplen con los requisitos planteados para evitar los rotulados, pero no podrían ser incluidos en la categoría de alimentos no procesados.

 

Jaime Delgado Zegarra es el Director del Instituto de Consumo de la Universidad San Martín de Porres. Su sagacidad y persistencia han sido cruciales para el desarrollo de la ley y sus implicancias. Su defensa en pos del consumidor lo ha llevado a enfrentar a grandes empresas y actualmente sigue trabajando con ahínco en el tema. Defensor de la ley, espera al 17 de septiembre cuando entrará en vigencia su segunda fase, con estándares más altos. Sin embargo al momento de analizar el fenómeno subraya que “ la alimentación saludable variada es aquella que se basa en productos frescos naturales sin procesar o mínimamente procesados, que te garanticen los nutrientes que tu cuerpo necesita. Frutas y verduras, comida viva; proteína vegetal o animal y granos. Los carbohidratos que necesitas y el azúcar natural propia del alimento. Todo lo adicionado es accesorio, un snack, es accesorio. Tu almuerzo tiene que ser comida de verdad”, dice.

 

En Lima, la recepción de Bivo ha sido buena. Era de esperarse, ciudad curiosa, ya contaba con antecedentes importantes que allanaban el camino y se sumaban a la oferta del mercado de toda la vida. Mercados (exclusivamente) orgánicos de Miraflores, Barranco, La Molina y Surquillo (nombrados por los barrios en donde se ubican); y las Agroferias Campesinas, que agrupan a una diversidad de productores que llega de todo el Perú para vender en la capital los fines de semana (reubicada en las instalaciones del Puericultorio Pérez Araníbar de Magdalena por pandemia), uno de los modelos de diversidad y protocolo que destaca en la ciudad. Las pequeñas tiendas o bodegas orgánicas también han confirmado su presencia durante el confinamiento con servicios a domicilio; completándose la oferta con la reaparición de las verdulerías y fruterías en un sector de la capital en el que el gran supermercado las había borrado casi por completo del mapa. Así, en poco tiempo, era natural que Bivo creciese: hoy ya cuenta con otro local en el distrito de Magdalena y se apresta para abrir en Ecuador, habiendo sido reconocido por la Asociación Peruana de Consumidores y Usuarios (ASPEC) como la mejor iniciativa innovadora y saludable a nivel local, bajo los criterios establecidos de Consumers International y la Food and Agriculture Organization (FAO).
Si bien en Bivo Market Saludable todo es empacado, algunas menestras, granos o semillas sin procesar, por bioseguridad e higiene, no encuentran otro tipo de presentación por el momento. Un espacio donde se ha hecho una buena curaduría de productos empaquetados y en las recorridas no encontramos ningún engaño al consumidor, donde se encuentra desde quinua orgánica hasta lavavajillas ecoamigable que abre la posibilidad a nuevos emprendedores locales.  “Trabajamos con 100 proveedores y sacamos al mercado más de 500 productos. Fue más complicado, pero no importó tanto porque queríamos dar el ejemplo al empresariado nacional. Ofrecer un buen surtido dándole beneficios al comprador, con precios competitivos”, dice el pujante y decidido empresario David Novoa por teléfono desde Estados Unidos, donde se encontraba en viaje de negocios. Aunque “competitivos” no significa que los productos se encuentren al acceso de todos ni sean parte indispensable de la canasta básica del común de los peruanos. En Perú este nicho es y se percibe costoso. La compra diaria se hace en un mercado tradicional y un supermercado, donde acude la mayoría tentados por la oferta.

A Jaime Delgado la iniciativa le parece interesante como estrategia para romper la resistencia de la gran industria que no se puede (ni parece querer) reformular sus productos disminuyendo la cantidad de azúcar, grasas y sal. A raíz de la ley, la renovación ha sido local, y pequeños productores, cocineros e ingenieros agrónomos han comenzado a lanzar emprendimientos con alimentos mínimamente procesado y artesanales.

 

 

Las visitas a Bivo han sido una experiencia interesante, novedosa, y para algunos rubros prometedora. Pero la comida viva debería integrarse al proyecto. Si para algo ha servido esta pandemia es para recordarnos que la cocina casera, esa que había sido dejada de lado, se prepara con tiempo y con alimentos reales. Que la compra diaria y barrial invita a consumir más fresco y verde. Que una mejor alimentación es salud y que debe valorarse el privilegio de tener una biodiversidad tan grande que no necesita reposar en telgopor ni ser envuelta en plástico (artículo originalmente publicado en el portal latinoamericano www.bocado.lat).

 

 

 

Si bien muchos de los productos de Bivo son de interesantes emprendimientos locales y han ido creciendo con el tiempo para pasar de ferias artesanas a markets, apostando por lo vegano y sin gluten, hay otros que proceden de marcas internacionales que se incorporan, abriendo el registro de alternativas para celíacos que hasta hace poco en Perú era de un rango muy limitado. Estos se encuenran dentro de los límites para no llevar octógonos, pero siguen siendo procesados y no “comida viva” como la que encontramos en los mercados orgánicos o tradicionales.
