Empezó con Chakupe y La Picantería y, hace poco más de una semana, arrancó Fiesta, no solo con delivery sino también abierto al público: cuatro mesas. Solís, uno de los mayores impulsores de la cocina regional chiclayana, no ha querido dar un paso en falso y, respetando protocolos, incluso piensa a futuro y en el concepto barrio. Su visión de comunidad y país se ha fortalecido en estos meses, y esa pasión que le pone a sus fogones la traslada a ideas para muchos podrían parecer revolucionarias, pero que al final, son puro sentido común.
¿Cómo ha pasado tu tiempo en cuarentena? Siento que han sido años y, cuando además te das cuenta que recién vamos por la mitad, porque tienes que enfrentar la realidad y analizarla, me horrorizo. Hemos destruido una y dos y tres veces planes que veníamos desarrollando y no nos han servido, el papel no sirve. El resultado es producto de tener otra visión de la vida y de la gastronomía en el Perú. En nuestro caso, el comercio por comercio y solo el tema de dinero no existe para nuestros negocios, que han podido solventarse y abrir de nuevo. Lo hemos hecho solo por la familia que hay detrás, nuestros colaboradores y la gastronomía. De lo contrario cerraba, no por quebrar, sino porque ahora los proyectos no son atractivos económicamente. Decidimos seguir para cuidar el empleo de casi 200 personas de todo el grupo, que somos una familia. Es irresponsable liquidar.
¿No estábamos disfrutando la gastronomía? Estábamos en una competencia. Y si mañana se cae el mundo, nos hemos pasado sufriendo los últimos años por pagar colegios caros que no podemos afrontar. Una lucha por la universidad por el postgrado, para que nuestros hijos vayan a estudiar a Plutón o a Marte mañana. Al final no disfrutas de lo verdaderamente importante. Son visiones de vida y luego te ves inmerso en una vorágine y tienes que seguir y darle con todo, y te conviertes en un hombre máquina. Hong Kong. No tienes vida familiar de casa, vida con otros seres humanos, ni vínculos, no los conoces. Vives en el trabajo.
Recuerdo que una vez conversando contigo hace unos cuatro años me comentaste que tu ideal era cerrar todo e irte a vivir a una playa. A los 50 años y aún no los cumplo. Ese es mi plan final. Ojalá que Dios me de la vida para cumplirlo. Quisiera eso, estoy trabajando en trasladar responsabilidades en gente joven, que además son chicos que hacen toda la chamba, es necesario que sean reconocidos. Tengo un grupo de cocineros y cocineras y de sala muy especial. Los Solís hemos hecho una marca, un estilo con nuestra cocina y servicio, y detrás de eso hay personas que han trabajado toda la vida con nosotros y queremos que se luzcan. Que en algún momento sean nuestros socios, dueños y que los restaurantes se queden con ellos, lo que debería ser. Sigo en esa firme idea de irme a hacer un puesto en la playa y vender de pescado frito. Con unos Bloody Mary… risas.
Comenzaron los delivery. Abrieron las puertas de Fiesta. La decisión tomó tiempo. Sí. Comenzamos delivery con los tres (Chakupe, Fiesta y La Picantería). En Fiesta abrimos solo con cuatro mesas. Usualmente antes de la pandemia recibíamos 200 personas al día y con el producto y calidad que ofrecíamos, se hizo imposible; hablamos con mis hermanos y redujimos a 100 y luego a 60. Nos agarró la pandemia con 60 por decisión propia y ahora máximo tenemos aforo para 20 o 25 personas. Los restaurantes fuera de Lima están cerrados, Chakupe y La Picantería sigue con solo delivery; estamos planteándole una propuesta arquitectónica al alcalde de Surquillo tomando ejemplos de fuera: sacar las mesas, hacer una ramada. Hemos traído arquitectos, pero no solo para nuestro caso, sino para todos los restaurantes de Surquillo, que se convierta en un bulevar gastronómico, ordenado, con diseño, sin vivos ni chupódromos, con parámetros y protocolos. El proyecto ha tenido buena acogida y está en debate. Si se aprueba, lo hacemos.
Activar más la economía de barrio del distrito. Lo que muchos expertos están recomendando. Exacto. Consumir lo que te da tu barrio y sin moverte lejos de casa. Estamos trabajando con mis chicos para que puedan mudarse más cerca, a Surquillo pues viven muy lejos. Ahora todo nuestro personal se mueve en movilidad privada. El auto los recoge que la puerta y tienen compromisos con nosotros de no andar festejando o saliendo si no es necesario.
¿Cómo manejar costos? Porque tu lema es “con el producto no se transa” y el buen insumo es, a veces, costoso, sobre todo cuando llega de lejos. “El producto no es negociable”, algo ha pasado en nuestra vida gastronómica que hubo un cambio: por ejemplo, pasamos de comer un cebiche con un producto fresquísimo, a recibir cualquier cosa. Dejó de importar la comida por la comida, el disfrute, y el restaurante se convirtió en un espacio para que te vean, tomarte una buena foto, un selfie que pudieses colgar en tus redes sociales. Lo gastronómico va por otro camino, va por la calidad del producto. Perú no tiene que ofrecerse al mundo como comida barata, es una cocina de alta gama por su insumo y tradición. Si queremos ser una marca mundial, no sostenida en una lista, sino de peso, y que quien nos visite no se vaya con una intoxicación estomacal por una cadena de frío mal hecha, entonces no se transa con el insumo. Hay cebiches que cuestan S/20 y S/ 30 en restaurantes en Lima y son estafa. De S/ 50 y S/ 70 e igual son estafa, porque te dan pésima calidad, prima el adorno, pero no hay producto. Nos estamos transformando y normalizando una situación que no es la correcta, donde si el pescado está un poquito mal, los fríes o lo bañas en salsa de seco y ya pues, así queda.
Esta pandemia ha destapado muchas fallas estructurales no solo en nuestra gastronomía sino también en nuestro cotidiano. Por supuesto, verse obligado a viajar dos tres horas para llegar a trabajar de ocho a nueve horas al día, mientras te cambias, te vistes. Eso es perverso. Todo el mundo lo sabe, pero siguen sin resolver el tema del hacinamiento, de las plazas, no se generan anexos a grandes mercados a donde lleguen camiones directo de las chacras, desinfectados. No hay estrategia: por ejemplo, cobrar S/ 10 por puesto para mantenerlo limpio en lugar de pagarle a extorsionadores para que te cuiden un lugar o te dejen trabajar ahí.
La informalidad nos ha arrasado, pero lo formal también, en ocasiones es una formalidad solo en papel. Hay una pequeña nube y burbuja de restaurantes que esta exentos de todo eso; pero en la gran mayoría ves el drama y es un problema del país, no es solo de la gastronomía. Se da en todos los sectores y es una crisis en la que vivimos hace ya bastantes años y se sigue prostituyendo más. Nos piden formalidad y se mantiene la informalidad. Los informales vestidos de formales son los mas dañinos. Absolutamente informales pero vestidos de formalidad. Después están los informales, que, ante la situación, tienen la valentía de salir a vender en la calle un cebiche. Dan la cara.
Este tema, que es mucho más profundo y nos destapa como país, necesita de políticas públicas efectivas. Un chef no lo va a solucionar. No hay posibilidades, en un país gastronómico no existen políticas para alentar la gastronomía. Todo está mal diseñado desde la cabeza. Todo muy bien con la minería, pero no podemos pasarnos la vida vendiendo piedras y metales, siendo solo un país extractivo. Qué vergüenza. Queremos y podemos ser un país gastronómico, alentar a los emprendedores, como a la gente que está en la calle vendiendo. Estoy ideando camiones de comida que vendan cervezas, sánguches, vinos. Ya tengo el diseño para presentar a la municipalidad y que se puedan conseguir créditos para que los emprendedores arranquen. Camiones con agua, desagüe, calefacción y cocinita. Este tipo de políticas debería existir y que se dejen de pagar cosas que las instituciones puedan asumir para incentivar.
Seguimos siendo ese país de gran diversidad y riqueza, pero sin oportunidades por falta de estrategias. Un país tan rico como el nuestro que no alimenta bien a sus niños. Nuevamente todo viene desde arriba. Necesitamos acceso a educación alimentaria, a cultura, prestar atención a la pesca artesanal, a la agricultura. Todo eso llevado a una industria para que el gobierno que se ponga a pensar y genere un marco legal con conocimiento de causa y políticas basadas en conocimiento. Es complicado, pero nos tocaría. Ver el lado social, personal con proveedores, negociaciones con bancos. Ser formal en este país no es negocio, es ser desquiciado. Hay que reformular, cambiar, como ciudadanos debemos hacer propuestas globales desde la nutrición y educación alimentaria.
A este desorden de fondo se suma la educación. Cursos que fueron erradicados de la currícula como educación cívica, y otros que nunca fueron considerados como educación alimentaria. Educación cívica. Yo estudiaba en un colegio fiscal y me enseñaba un coronel del Ejército educación cívica. Deberían dictarse dos, tres, cuatro horas a la semana. Enseñar amor por el prójimo. Ahora los nuevos tiempos exigen que todos sean libres y que tengan derechos, y está bien, claro, pero nadie tiene obligaciones. Para poder conseguir tus derechos tienes que tener obligaciones y respetar para se te respete.
¿Y tener derecho a comer bien entonces? Todos los peruanos deben de tener el derecho a ser nutridos por ley. Comer es vivir, comer bien es vivir, si no tienes tiempo para eso… Y comer bien es tener tiempo y no comer parado, hacerlo para nutrirte, pero también por placer, por satisfacción, alimentar cuerpo y alma. No ir a un restaurante costoso, por ejemplo, para apurar y que te sirvan la comida. Encima tienes la oportunidad de disfrutar y no lo haces. Vivimos en un país ancestralmente gastronómico, no impuesto. Está en nuestro ADN y las personas que no son de acá y quieren transformar a Perú no pueden. Felizmente hay formas de verla la vida que se comienzan a abrir, comer para sanar y comer bien, lo que no significa pagar caro.
En este tiempo de cuarentena y pandemia hemos visto que muchos han comenzado a acercarse a agricultores y comprarles directamente. ¿Crees que esto crezca? Ojalá que lo aprendamos, que sí, que esto continúe, porque son enseñanzas. Y lo otro es el vivir y aprender a estar juntos. Mucha gente se ha convertido en panadero, hace cosas en casa y ojalá que esto siga pasando. Es un buen avance dentro de todo lo negativo. Sigámonos cuidándonos, juntándonos lo menos posible, no salir si no es de vital importancia y tratemos de valorar que tenemos. La familia.
