El 26 de abril tuvo lugar una nueva edición de este evento que promueve la cocina y los vinos argentinos en el mundo. Estuvo a cargo de cinco grandes cocineros –Narda Lepes, Mauro Colagreco, Germán Martitegui, Guido Tassi y Fernando Trocca–, y se realizó en Piedra Infinita, la bodega que la familia Zuccardi tiene en Valle de Uco, Mendoza.

Una vez más, chefs amigos se juntaron a cocinar y difundir la riqueza de la cocina argentina en este nuevo Diez Manos. El marco no podría haber sido mejor: la Cordillera de los Andes, telón de fondo de Piedra Infinita, la bodega que Familia Zuccardi tiene en Paraje Altamira, Valle de Uco. Esta vuelta surgió bajo el paraguas de Latinoamérica Cocina, el evento cuya primera edición, en 2018, contó con la presencia del peruano Gastón Acurio y del colombiano Harry Sasson, en la misma viña. Y como entonces, grandes figuras pusieron las manos en la masa ayudados por el chef anfitrión Matías Aldasoro y su equipo en este escenario privilegiado de bodega, restaurante y parque bellamente ambientado por Delfina Magrane. A los Diez Manos se sumaron otros chefs y periodistas invitados locales y del resto de Latinoamérica que disfrutaron del paisaje de montañas y viñas tanto como de la comida y los vinos.
Mención aparte mereció el aceite fresco recién envasado por Miguel Zuccardi, de la variedad Arauco. Y los quesos de Mauricio Couly, de Neuquén.
Hubo platos individuales y otros preparados entre todos, como la sopa de piedra. A medida que los comensales iban llegando, los chefs, cocinando a la vista, fueron “sacando” las entradas, como las calabazas en tempura con alioli de Narda; el shawarma de chivo con uvas y aliño tradicional de Germán; y la berenjena asada con vinagreta de granada y comino, crôutons de masa madre y hierbas de la huerta, con los espumantes Alma 4, más los tragos de Tato Giovannoni.
Hubo sopa (con un picor ideal) acompañada por Zuccardi Q Chardonnay 2017; un tamal relleno con perdiz confitada y macerada en Zuccardi Fósil San Pablo 2018; morcilla grillada (Guido Tassi) con caldo y porotos frescos, puré de manzanas silvestres y rabanitos y nabo rallados; el cordero braseado, confitado y armado en lingote con guarnición de batatas, dátiles, cebolla caramelizada, nueces, y un puré de membrillo. Plato que combinó muy bien con Zuccardi Finca Piedra Infinita 2015. Y dos postres, el primero figura en la carta de Mirazur: caqui con crema de Cognac, exquisito en su sencillez, acompañado por Solería by Malamado. El segundo momento dulce: ricotta de cabra con dulce de leche de cabra y castañas.
No hay cocina local sin productos locales. Y en su gran mayoría, el evento reunió ingredientes de cercanía. “Vino una señora y nos trajo una bolsa de castañas; otra, de caquis; otra, de membrillos y zapallos. Pasamos a buscar la miel a lo de una vecina y están por traernos la leche de cabra para el postre. El corredor productivo del Valle es el que nos proveyó los ingredientes y así fuimos armando el menú, dando a conocer la tierra y la gente de Mendoza, a través de sus productos”, cuenta Narda Lepes, única mujer del equipo, contenta con el debut de su programa de radio al mediodía (Mesa Compartida, de lunes a viernes de 12 a 1 por la Metro).
A pesar de la crisis del país, este tiempo los encuentra trabajando y muy activos. Martitegui abrirá nuevo un restaurante en septiembre a tono con la idea de su proyecto Tierras, con el cual recorre las provincias argentinas a la pesca de productos, recetas y tradiciones argentinas. “Si vivís en Europa todo está hecho. Acá en cambio las posibilidades, hacia todos los rincones del país, son infinitas: hace falta un plan maestro que haga que la gente pueda producir y vivir feliz de lo que cosecha y se le pague el precio justo, quedándose en las zonas rurales increíblemente bellas donde viven sin tener que venir a amontonarse en la ciudad a sufrir. Hay mucho por aprender, ver y sobre todo por preservar, porque si no se pierde irremediablemente”, dice Germán.
Mauro Colagreco llegó a último momento porque su vuelo se atrasó y no paró de cocinar. Contó que conoció Mendoza de chico, porque su padre nació en esta provincia. Destacó el trabajo ejemplar de los bodegueros en el mundo para posicionar el vino argentino y señaló el problema actual de la fruta en el valle y el valor del trabajo de los agricultores. “Se tienen que tratar de mantener las tradiciones y para esto el trabajo del granjero es muy importante: tenemos que tomar conciencia de los productos que utilizamos, los agroquímicos que uno se mete en el cuerpo: en este sentido todavía falta un gran trabajo”,afirma. Actualmente, él desarrolla el quinto terreno destinado a la huerta de Mirazur (Francia). Allí trabaja con el concepto de permacultura eludiendo cualquier producto químico. “Quiero darles y dejarles este legado a ellos”, dice señalando a su hijo que lo acompañó y ayudó durante toda la comida.
Fernando Trocca abrirá una sucursal de su restaurant Orilla en Miami en julio/agosto de este año. Y otra más de su parador Santa Teresita en Los Hamptons, New York, para el próximo verano. “La evolución de la gastronomía está ligada al país, pero como somos argentinos y estamos acostumbrados, evolucionamos de cualquier modo, y lo hacemos para bien. Los proyectos nos mantienen vivos”, dice. Guido Tassi cocinó sin descanso. Sigue con sus increíbles desarrollos de chacinados en Chancho Chico y acaba de abrir un nuevo restaurante junto a Pablo Rivero y Martín Lukesch en lo que fuera El Preferido de Palermo, vecino de la parrilla Don Julio.
Para los anfitriones Ana Amitrano, José, Sebastián, Miguel y Julia Zuccardi, la meta era promover la Argentina y sus productos, con un evento hecho con cariño y emoción, “sin ostras ni pavadas, con respeto por Mendoza y por nuestra región”, explica Ana.Y concluye: “Qué se yo hacia dónde pero vamos a seguir con este tipo de eventos a pesar de que los números no acompañen tanto para hacerlos. Como latinoamericanos que somos, estamos orgullosos de la cocina argentina y de Mendoza”.
Mauricio Couly (Neuquén, quesos fermier de quesería Ventimiglia, Restaurant La Toscana, almacén Hermanos Toscanos), llevó sus hormas para armar dos mesas gigantes de queso para cerrar la comida, una suerte de bacanal en el paraíso de Mendoza. En una de ellas estaban los quesos blandos con notas a almendras, bien cremosos sin sabor a amoníaco, singularísimos, como el Reblochon de vaca, el Gascony de cabra y otros de cáscara lavada con maduración secundaria (se convierten en otra cosa una vez fermentados porque se rompe la proteína). Fueron el resultado de una técnica que aprendió en Suiza y Francia el año pasado. Luego en otra mesa estaban los duros y los azules como el ya famoso queso de autor Patagonzola de cabra y oveja, el feta estacionado un año, el petit cabrino, el Cuatro Esquinas y la novedad, un queso estilo pepato pero con pimienta de Canelo, más en estilo holandés.
Hechos con 100 por ciento leche propia en estilo fermier, son las mismas recrías de las vacas Jersey con las que se inició las que dan la leche, ya que en la Patagonia no se pueden ingresar animales. También cuenta con cabras Anglo Nubian y Saneen y ovejas frisonas. “Pero mi producción es limitada porque luego de la reproducción y nacimiento la vaca recién en tres años puede dar leche”, concluye el maestro quesero.
“Había una vez un viejito que llegó a un pueblo donde todos estaban muy ocupados en sus cosas, como siempre sucede. Entonces se sentó en la plaza principal, prendió un fueguito, sacó una ollita, le puso agua y se puso a esperar. Las personas intrigadas le preguntaron qué estaba haciendo. Y él contestó: “estoy preparando una sopa de piedra”. Entonces sacó una piedra de su bolso y la puso dentro de la olla.

Desconfiada, ella le regaló unas zanahorias para que la sopa tuviera gusto a algo más que a una simple piedra. Y el viejito respondió: “no probé nunca pero mal no va a quedar”. Y las agregó, sonriendo. Y así llegaron las distintas familias del pueblo durante todo el día con sus ingredientes que iban donando, casi sin querer, para que la sopa estuviera más rica: sus huesos con algo de carne, sus ajos, sus papitas, sus choclos. Y al caer la tarde, todos se acercaron a tomar la sopa y festejar toda la noche.
Dicen los que cuentan que jamás se probó una sopa más rica en ese pueblo. Al día siguiente, el viejito se levantó, tomó su ollita y se fue. Y todos penaron: nunca más iban a poder comer una sopa de piedra tan rica como esa”. “Siendo en Piedra Infinita, nos gustó la idea de hacer un caldo entre todos”, explicó Narda después de relatar el cuento. Hasta Tato Giovannoni aportó los suyo con sus cocidos para los tragos con Malamado, entre otras bebidas. Y Germán concluyó: “Fernando, Guido, Mauro, Narda y yo teníamos los ingredientes para la sopa pero nos faltaba la piedra. Estamos muy emocionados porque la persona que nos ayudó a surgir como grupo y que puso la piedra hoy no está presente físicamente entre nosotros. Pero estoy seguro que está en algún lugar pensando “apúrense boludos, que se enfría la comida, dejen de hablar”. Este Diez Manos está dedicado a su memoria”. Y la mejor manera, “lo más lindo que podemos dar hoy es esto, volvernos a juntar, también, como un homenaje a Raquel”, concluyó Mauro Colagreco.
Fue el primer Diez Manos sin la presencia física de la querida periodista Raquel Rosemberg, que supo unir las voluntades de estos grandes cocineros para reunirlos por primera vez en París, convenciendo a su amigo, Mauro Colagreco, chef de Mirazur en Menton (Costa Azul), el primer argentino en lograr la distinción de 3 estrellas Michelin. Luego de lograr la primera reunión, volvieron a juntarse en Londres, Menton, Zurich y José Ignacio. Ahora le tocó el turno a Mendoza.
