En el mundo de la coctelería su nombre es una referencia entre los bartenders dentro y fuera del Perú. Conversamos con Aaron Díaz Olivos sobre su nueva carta, Alquimia IV, y los proyectos que orbitan alrededor de Carnaval.
Alquimia IV, la nueva carta del bar Carnaval de Aaron Díaz, se inspira en relatos de aventura, habla de mitos y leyendas. Un recorrido líquido por el Perú, donde ocho fórmulas creadas por Díaz y su equipo se presentan como personajes. Con el apoyo del artista plástico Rafael Lanfranco “creé un mundo imaginario con los nombres de ambos, Lanfranco Díaz, una especie de Indiana Jones peruano en busca de la verdad, que con su investigación ayudó a descubrir Caral y otras culturas, pero que en 1982 desaparece sin dejar rastro”. En su historia, Aaron Díaz recibe una encomienda de 40 años atrás y, con ella, la primera bitácora creada por Lanfranco Díaz donde se revelan los primeros ocho guardianes de este imaginario.
Desde muy joven a Aaron le nació el interés por la hospitalidad. Tenía 13 años cuando, durante un verano en las costas de Camaná (Arequipa), donde vivía su abuela, trabajó en una taberna levantando mesas, lavando vasos e inspirándose en lo que sería el futuro: estudió arte culinario, gestión de restaurantes y para ser bartender profesional. Con 19 años tenía sus ojos puestos en el mundo, y fue esa mezcla de cocina y coctelería la que hoy sigue llevando los procesos de todos los bares que crea. Trabajó en The Aviary, Chicago, regresó a Perú e ingresó a la barra de Astrid y Gastón, primero en Cantuarias y luego se hizo cargo del programa de bebidas en Casa Moreyra, hasta 2015. El sueño de tener su propio bar no lo abandonaba.
Así decidió emprender con su espacio propio y, con Diego de la Puente y Diego Herrera como socios, creó Carnaval Bar, dedicado a la coctelería conceptual, creativa, donde la música y la celebración nunca paran. Este concepto rápidamente lo hizo visible ante el mundo: en 2018 recibió el One to Watch Award de la lista The World’s 50 Best Bars a la cual ingresó el año siguiente en el puesto 13 y en la cual (salvo en el año 2021)se ha mantenido en diversas posiciones.
Aaron se convirtió para Latinoamérica en un referente de la coctelería modernista. Cada año sus cócteles cambian, con una carta que recibe el nombre de Alquimia, llena de bebidas con mucho color y técnicas diferentes que van desde variaciones cromáticas, luces, temperaturas, siempre de la mano del producto peruano.
Todo iba viento en popa hasta que la pandemia (2020) paralizó la operación. Y aunque su mente no paraba de pensar, pasaron dos años hasta que pudo reabrir con Alquimia III, una carta llena de magia, con creaciones como el French Connection, un cóctel que llega congelado y se derrite lentamente con una lámpara permitiendo el disfrute largo; el Dark and Stormy, que se servía en un matraz de decantación, o el mojito Carnaval que demuestra otra de las cosas que destacan en este bar: el laboratorio de hielo que lidera Raul Arcayo, jefe de hielos. Una carta con una vida de casi dos años, orientada a capturar a los clientes locales, en un mundo pospandemia donde el consumidor cambió de hábitos: el peruano hoy sale más a bares y la oferta se amplía.
Hace un año, y después de haber recorrido más de 15 países en el primer semestre de 2023, Aaron Díaz nuevamente frenó: su cuerpo le pedía parar, una lesión en la pierna izquierda no lo dejaba caminar bien o estar de pie mucho tiempo, él quería seguir en el ritmo frenético de los viajes, pero su cuerpo no. Se sometió a una operación y terapia, sin embargo, eso no detuvo su proceso. «El parar en Lima me obligó a trabajar en proyectos que tenía pendientes», dice.
Lo primero que logró fue acabar Alquimia IV, una tarea que tenía pendiente. Recordemos que en la serie Alquimia, cada carta tiene un estilo: Alquimia I se inspiró en los viajes que Díaz hizo por el mundo; Alquimia II estuvo enfocada en los carnavales que inspiran el concepto de bar y que son importantes culturalmente; Alquimia III, el mensaje fue “nada es lo que parece” y se enfocó en cócteles clásicos de otras formas. Hoy, «Alquimia IV es una carta dedicada a esas cosas que no podemos confirmar… cómo se construyeron Machu Picchu, las líneas de Nazca o las pirámides de Egipto, el trabajo de que hice con Jota para lograr esta carta nos llena de emoción»
En “Los guardianes de Perú. El mundo imaginario de Lanfranco Díaz” se han desarrollado ocho guardianes, que se sirven en contenedores únicos realizados por el ceramista Edi Mérida. Ellos son:
Las cartas de Carnaval siempre han contado con productos locales, pero no solo se fía de lo que hay en el mercado, sino que hace la alquimia con desarrollo de productos en colaboración pensados para la coctelería dentro y fuera de su bar. “Cuando abrí Carnaval en 2018 comencé a desarrollar algunos productos como una cerveza con Barbarian como homenaje al cóctel Sachacool, creado en La73 de Barranco siete años atrás. Así nació mi pasión por las cervezas artesanales; era de trigo con notas a sachaculantro, lima, naranja y pimienta molle. Siempre quisimos desarrollar productos, pero en 2022 cuando abrimos no hubo tiempo para crear nada, era sobrevivir. Luego de bajar el ritmo de los viajes, a mediados de 2023, tuvimos tiempo para retomar los proyectos de colaboración”.
Con el pisco Barsol Acholado Carnaval, por ejemplo, se ha hecho magia. Aaron busca crear sus propios productos desde 2018, cuando en colaboración con Johnny Schuler lanzaron una edición especial de Pisco Portón. «Ese pisco era de ellos, con la marca Carnaval, y desde entonces tenía la idea de crear el pisco desde cero, que fuera especial para coctelería”. Esta nueva colaboración es con Barsol. «Conocía la marca desde hace 20, cuando tenía otro nombre (Mendiola), y siendo yo un chibolo, buscaba auspiciadores para el concurso panamericano de bartenders, ahí conocí a Diego (Loret de Mola) y comenzó nuestra amistad”.
El pisco Carnaval lleva un trabajo más de investigación y desarrollo. Meses de viajes a Ica para construirlo junto a Jota (José Benítez), head bartender y líder del programa de pisco. Así, con Aaron y Diego ensamblaron el proyecto y firman la etiqueta. “La consigna fue hacer un pisco que vaya bien con los cuatro cócteles íconos peruanos: chilcano, sour, capitán y tonic”. La fórmula final incluye: Mosto Verde de Quebranta, puro de Quebranta, puro de Mollar, Torontel, Moscatel y pisco Quebranta de 20 años de guarda, que representan los 20 años de amistad entre ellos. Este blend se reposó 10 meses y se produjeron 600 botellas aprox. “Es un pisco elaborado por bartenders para la coctelería peruana y su principal valor es ser versátil. Lo vamos a usar en la carta Alquimia IV, como base para los clásicos peruanos y para la venta pensando en que se pueda usar en otras barras”.
La Carnaval Cola es otra bebida propia. Una gaseosa que surge como alternativa a las colas comerciales. “Comencé a rechazar la venta de las marcas de colas negras, lo que me llevó a chocar con los clientes que pedían un Cuba Libre o solo una gaseosa; pero siempre soñé con crear una bebida nuestra. Recién lo pude hacer este año en colaboración con Mr Perkins, quienes, como nosotros, trabajan con pasión”. Esta gaseosa también es versátil, es un mixer para destilados como mezcal, tequila, whiskey y ron, que además acompaña comidas como la Carnaval Burger. “El perfil de sabor es a especias, cítricos, nueces, dulce y crema; además es un producto sin color, completamente transparente. Cuando lo vimos pensamos en Crystal Pepsi, una bebida que tuvo una corta vida en la década de los noventa. En mi caso, como creativo, busco ser disruptivo y tener una gaseosa que no tuviera el color”. La idea es que este producto se pueda usar en las casa y hoy se puede conseguir en Wong.
Para cerrar, al menos por el momento, las cervezas Carnaval hechas con Invictus. Díaz destapa la primera de tres cervezas desarrolladas en conjunto con la cervecería. “La idea es que el que no opta por un cóctel, pueda tomar algo hecho por Carnaval”. Son tres perfiles: una Session IPA, con 5.5 AbV*, y 20 de IBU* con lavanda y toronja, refrescante y redondeada con un lúpulo delicado; una Lager, con 5 AbV y 12 IBU, cristalina con sabor brillante y aromas a pan, muy refrescante tipo pilsner; y una Dubbel, de 7.5 AbV y 25 IBU, más maltosa, con notas a vainilla, chocolate, madera y nuez. Estarán disponibles en botella y el tab como cócteles un carbonatados. (*) AbV, alcohol por volumen, IBU es el índice internacional de amargor. “No es una búsqueda de hacer productos por que sí, es colaborar con gente que hace un buen trabajo, Barsol, Invictus, Mr Perkins y pronto un vermú blanco con Avelino”.
“Quiero hacer más bares”, afirma Aaron. Conceptos distintos que fluyan solos, bares chiquitos, que funcionen en Lima o en otra ciudad. Carnaval es un proyecto grande, es una operación como la de Central, Maido o Astrid y Gastón, somos 32 personas”. Dentro de esa expansión, se unió a Juan Rojas y Martin Pasache en el relanzamiento de Hidden Bar, en Miraflores.
Cuando hablamos del futuro de la coctelería en relación a la visibilidad internacional que ahora tiene Lady Bee nos comentó: “Alonso (Palomino) es como mi hermano menor, si él no hubiera abierto Lady Bee, sería uno de los pilares de Carnaval junto a Raúl y Jota. Dentro de lo que Carnaval ha logrado, es un pilar de lo que hoy hemos, dos años después aquí hay todavía su esencia, hay un agradecimiento infinito de mí hacia ellos, lo que él hace también tiene mucho de Carnaval. Jhon Rojas en Bijou, lo que se hace en el Nuevo Hidden Bar y nuestra Melissa Barrera que ahora está en Abu Dhabi, muchos de ellos han salido de Carnaval, además del trabajo del Chino Flores, Sastrería Martínez de Diego Macedo, Limaq de Joel Chirinos, a todos los apoyo. Que hayan buenos bares con conceptos fuertes mejora la industria”, afirma.
Desde Carnaval, Aaron también busca impulsar marcas locales: “siempre en mis guests uso marcas de destilados peruanos”, en sus cartas de viaje incorpora, por ejemplo, Matacuy, 14 Inkas, Salqa, Avelino, Sinsonte, entre otras. “Ando creando cosas todo el tiempo y me encanta”. Y eso lo define: una mente que no para de moverse, siempre haciendo magia.
