Su pasión es la pastelería, aunque reconoce que comer un postre no es algo indispensable. Pero él es positivo y desde hace más de 25 años trabaja para tentarnos con lo que hace. Desde ese rincón libanés que es su restaurante Habibi, en Mérida, el puertorriqueño Antonio Bachour, premiado como Mejor Pastry Chef del Mundo en 2018 y 2022, reflexiona sobre su carrera y el mundo dulce en América Latina.
El ‘kibi’ frito es muy popular en Mérida. Se disfruta tanto en casa como en restaurantes, e incluso se vende como snack al paso, el favorito de los fanáticos del béisbol en Yucatán. Su nombre original es kibbeh y es tradicional libanés. Es una croqueta de carne que en Habibi la preparan con bulgur (trigo partido), va sazonada con especias y lleva piñones; se cuece a la parrilla o frita. Sabrosa. Antonio Bachour nos dice que en Mérida hay una colonia libanesa muy grande. Que en el siglo pasado (incluso antes), muchos migrantes desembarcaron en México por Mérida (el puerto Progreso) y Veracruz. Ese arraigo es una de las razones por las que Habibi se instaló desde mediados del 2022 en la capital yucateca.
Una decoración que transporta al comensal a Medio Oriente mientras probamos un fresco sorbo de Ankara, el coctel estrella de la casa, a base de ginebra, jugo de pepino, jarabe de menta, pistacho y labneh, que es un lácteo deshidratado derivado del yogurt y que toma consistencia de queso. Una mesa a la que van llegando platos de la propuesta mediterráneo-libanesa de Habibi dan paso a una larga y reveladora conversación. Antonio Bachour es quien habla. A él nunca le gustó el alcohol, no bebe. “Yo tuve una cirugía al cerebro”, y desde entonces toma medicamentos. Esa es la razón.
Pan pita y hummus distintos para empezar (uno al natural, de garbanzo con tahini y limón, y otro de camote). Antonio Bachour nació en Puerto Rico en 1974. En los años 60 su padre libanés migró a Brasil, luego a Colombia y finalmente se instaló en Puerto Rico, junto con su esposa. Allí vendió ropa puerta por puerta, montó una pollería, luego una carnicería y hasta un supermercado. Con el tiempo se hizo de la pastelería-panadería frente a su casa, y fue aquello lo que atrajo al goloso hijo menor, el sexto de siete varones.
Pero a este chico, cuando cumplió 17 años, le encontraron un absceso en la lengua. El resultado de los exámenes indicó un tumor en la base del cerebro, en la glándula pituitaria, responsable de producir las hormonas que regulan el crecimiento, el metabolismo, la reproducción y otras funciones corporales. Una operación muy delicada fue necesaria. En una clínica de Philadelphia le extirparon la hipófisis. Sobrevivió, aunque el proceso le generó dos aneurismas. Estuvo ocho meses en hospitalización, recaídas y terapias. Desde ese momento toma medicinas de reemplazo hormonal.
Pero un don tiene Bachour, y lo saben bien aquellos que lo conocen: es un hombre positivo. Sumamente positivo. Gracias a ello continuó con su vida: estudió en el French Culinary Institute de Nueva York; se enfocó tanto en aquello que lo apasiona, que se olvidó de su vulnerabilidad, de su condición, hasta dejó atrás la pena de la reciente muerte de su papá. “La mente es muy importante. Si tú dices que estás enfermo, estás a morir. Cuando tú dices en tu mente que estás bien, que estás saludable, y todos los días lo repites, te puedes autocurar”. «El poder de tu mente subconsciente» de Joseph Murphy es desde hace 7 años su libro de cabecera. Y su mantra, el decreto para el subconsciente de Conny Méndez “Yo soy…”.
Fortalecido física y espiritualmente, Bachour hizo carrera como chef ejecutivo en hoteles de lujo, desde los 90 hasta el 2014. En 2015 abre su primera pastelería, Bachour, que está en Coral Gables, Florida, donde hace un año también inauguró su gastronómico Tablé, en Miami Design District. A estos se suman el restaurante Habibi, otra sede de la pastelería Bachour y un deli en el moderno mall City32 de Mérida. Ocho libros e innumerables clases de repostería potencian el expertise del cocinero reconocido por The Best Chef como el mejor de su rubro en el mundo en 2018 y 2022.
Alisten cámaras. Llega el kachapuri, una especie de pizza en forma de ojiva alargada con queso feta y mozzarella rallada que va al horno para luego colocar al centro una yema de huevo cruda. En la mesa, con dos tenedores, se mezcla en forma envolvente. Bachour dice que la carta de Habibi está basa en sus sabores de casa. Buena parte de las recetas son de Sara, su madre, la gran mujer que estuvo a su lado en los tiempos más difíciles. Bueno, ella y su esposa, con quien lleva 8 años casado y es su gran apoyo, su compañera de viajes y de diversión, porque la vida hay que disfrutarla. Esa es otra de sus máximas.
Y es que Bachour viaja mucho, muchísimo. En su época de chef corporativo de hoteles, voló mucho a Tailandia y Singapur, estuvo en Doha, Osaka, Bali; también por Estados Unidos y Europa. Hoy dice que visita 40 países al año para dar cenas, hacer consultorías, atender eventos y banquetes de miles de personas, pero principalmente viaja para compartir lo que sabe. Le encanta enseñar y es usual encontrarlo dando charlas y asesorías en ciudades como Lima pero también en Yakarta (Indonesia) o Palermo, tierra siciliana del famoso pistacho de Bronte, de los mejores helados y panetones, como enseñan a preparar en la escuela siciliana Master Academy Galvagno, donde el chef imparte clases maestras para estudiantes de heladería, pastelería y cocina. Él mismo dice: “No me considero el mejor chef, pero soy una inspiración para la gente. Y eso es mucha responsabilidad también”.
¿Tú tuviste alguna persona que te inspiró? “A mí me inspiró mucho Paco Torreblanca, y fue de él mi primer libro pastelero que compré. Es uno de mis mejores amigos (…) Pierre Gagnaire también, cuando empecé él estaba en Robuchon, y me gustaba lo que hacía. Sí, es bueno inspirarse en gente. Hay que trabajar con muchos chefs al principio: a veces yo veo gente que trabaja 10 años en el mismo sitio, o sea no aprendes nada, aprende lo que puedas ahí y ya está. Cuando yo fui a Nueva York, empecé a trabajar cada año así, aprendía del chef, cuando ya no sabía más, me iba”.
Es verano, y con el calor de Mérida se agradece concluir la experiencia con el refrescante mahalabia, un sorbete de mango sobre natilla libanesa con cardamomo y agua de azahar; el delicado labneh cheesecake con sorbete de fresa, y el knafe de suave pasta katafi rellena de queso ricota y mozzarella y coronada con sorbete de labneh. Son postres de plato, deliciosos pero con una estética distinta a las tentadoras opciones que se lucen en las vitrinas de los cafés y las pastelerías Bachour. Desde sus macarrones y bombones, pasando por su viennoiserie de aroma irresistible, hasta sus petit gâteaux que son verdaderas obras de arte. Es el resultado de trabajar 25 años en pastelería. El chef no soporta a los entusiastas, esos que creen que hacer pastelería (y abrir un negocio como estos) es trabajo fácil.
¿Cómo ves la pastelería? ¿En el mundo, hoy? “Mucho mejor. En todos lados. En Europa está bien, como siempre, pero en Asia es muy buena, en Tailandia; en América Latina está creciendo”.
¿Qué le falta a la pastelería en Latinoamérica? “Creatividad, consistencia y calidad”.
¿Crees que en Latinoamérica la pastelería tiene una identidad que se diferencia, por ejemplo, de Europa o de Asia?“Todavía en América Latina no hay. Hay que empezar a hacer cosas. Hay que abrir camino. En Argentina está muy avanzada, está mejorando mucho. En Ciudad de México también están abriendo muchas pastelerías buenas; y bollería, aquí [en México] se vende mucho el pan. A Colombia todavía le falta mucho. Perú está empezando: ahora La Cristina está yendo bien, hace buena bollería, tiene buenos postres; el mismo Juan Luis [Martínez] con Mérito y haciendo en Demo los croissants. Creo que Lima está también empezando”.
Pero hablando de insumos como la lúcuma o la chirimoya, y de su importancia. ¿Los aprovechamos como deberíamos?“En algunos restaurantes sí, pero no en todos. Yo creo que más en restaurantes gastronómicos. En hoteles no. En hoteles siguen haciendo lo mismo y ese es un gran problema. Si tú tienes un hotel cinco estrellas en Lima, como el JW Marriott, como el Belmond, tienes que usar productos locales. Es importante que la gente, el turista o la clientela vea que tú tienes un producto diferente. En la pastelería o en banquetes, todos los días productos frescos. Es un gran trabajo. Y en América Latina todavía no tienen respeto a ese tipo de pastelerías”.
Han pasado algunos meses desde nuestro encuentro en Mérida y de la ceremonia The Best Chef Awards en que Antonio Bachour le entregó el premio a Mejor Pastry Chef 2023 a Jordi Roca (ganador también en 2019). En esa conversa el pastelero puertorriqueño nos habló de su amor por Lima y su familiaridad con el Perú, y así es: en diciembre vino para celebrar con Jaime Pesaque los 15 años de Mayta; en enero coincidió con Micha Tsumura en una cena a ocho manos en el restaurante Le Dú, en Bangkok; en febrero cocinó con Pía León en el South Beach Wine & Food Festival de Miami; y en marzo se juntó nuevamente con Pesaque para ofrecer un menú de 10 pasos en Table Miami.
Ahora, el pastelero ha vuelto para participar en un pop up junto al equipo del chef venezolano Juan Luis Martínez en Demo de Barranco. El jueves 4 y viernes 5, en el restaurante de Domeyer 282, el público limeño podrá disfrutar de su delicada bollería bajo el Bachour Style. Atentos al horario: es de 8 a.m. a 9 p.m. o hasta agotar stock. Seguro que todo volará.
