“Lo que tiene nombre existe”, reza un dicho del País Vasco. La comunicación es fundamental para avanzar, para entender lo que somos y lo que queremos ser. Durante 14 años se ha llevado a cabo Diálogos de Cocina, con el chef Andoni Luis Aduriz como uno de sus principales promotores y gestores, quien ha hecho del comer una metáfora del pensar. Todas las charlas de este conversatorio están subidas en el YouTube de Diálogos de Cocina.
Bien diría el filósofo italiano Andrea Tagliapietra que tenemos un apetito de conocimiento que empujamos hasta el plano de la curiosidad. Muchos verbos, en apariencia pertenecientes a la mesa, forman parte a la vida, como cocinar, devorar, empachar, hartar, digerir, beber, asimilar, madurar, y adquieren cotidianamente otras acepciones. Con una visión nítida de tales vinculaciones, hace 14 años el chef Andoni Luis Aduriz estableció desde su restaurante Mugaritz los primeros Diálogos de Cocina. Todo comenzó, al parecer, como una tormenta de ideas, en la búsqueda de acallar el hambre que no sacian los alimentos.
Andoni está en constante diálogo con aquello que lo rodea, en las redes, en la prensa, en conferencias y consigo mismo. No se trata de hablar por hablar, sino de hurgar con cuidado, desenfado y mucha intuición en el día a día de la gastronomía, evitando que el diálogo (o los resultados de este) se diluya en la cotidianidad y que reflexionemos. Al parecer es un filósofo prestado a la cocina, o quizá al revés.
Diálogos de Cocina se realiza cada dos años, y en 2021 se llevó a cabo su octava edición en alianza con el Basque Culinary Center y Eurotoques. En esta oportunidad, dadas las circunstancias globales, concentró todos sus esfuerzos en una jornada de vacunación masiva contra los virus que nos atacan a diario, contra los cuales resulta inútil lavarse las manos, guardar distancia o usar mascarilla. Para el chef Aduriz uno de los más difíciles de combatir es la pereza: “todo lo que exige además de tiempo, esfuerzo, desactiva el interés. Ir al gimnasio intelectual no es popular. En ese ejercicio de encontrar y contrastar las diferentes opiniones se me instaló en la cabeza la responsabilidad de ser más prudente al momento de deslizar una. Hay muchas razones sobre un mismo tema. Y ahí me di cuenta de lo superficial que es el mundo de la cocina”.
Este es el Diálogo de Cocina número ocho, ¿cómo ha sido la evolución desde ese primer encuentro hasta ahora? En sus comienzos hablamos de todo lo que convive en un plato cuando lo miras: el producto, el productor, para qué sirve, sus fragilidades, sus desafíos y el hecho de que muestra un mundo que es más obvio. Además, hay temas que plantean subtemas como modelos sostenibles, las vertientes culturales, etc. Luego incluimos la ciencia y la técnica, es decir, los avances y qué podían decir las reacciones físico-químicas de los alimentos. Creo que la primera ponencia de este tipo en España la dimos nosotros y mucha gente no entendió. Se sorprendió de que en un escenario de cocina aparecieran disciplinas muy distintas que en apariencia no guardaban relación. Generamos esta primera dinámica y se percibió como que nos asomábamos al futuro. Por último, exploramos los valores como la creatividad, la solidaridad, entre otros.
Tanto en la primera edición como en las posteriores, el cocinero prácticamente no aparecía en el escenario, era un observador. Lo diseñamos a modo de caballo de Troya, metiendo en la cocina conocimiento ajeno a su mundo, que era muy de comprar recetarios, y dimos una propuesta distinta que ofrecía herramientas de cara a los tiempos que ha tocado vivir. Eso fue cambiando, queríamos generar hambre en los cocineros, que sintieran curiosidad para que luego, por iniciativa propia, continuaran profundizando. Diálogos de Cocina ha ido cogiendo identidad propia y ha saltado entre temáticas. Es un encuentro, como en su momento le pasó a Mugaritz, no deja de ser un reflejo de vida que he llevado y es multidisciplinario. En la más reciente edición hemos tenido antropólogos, artistas, promotores culturales.
Entonces, ¿la pandemia ha sido una buena sacudida para los procesos de reflexión? Hace tiempo se me quemó el restaurante y eso no se lo deseo a nadie. Pero tengo que decir también que, una vez que salimos del lío desde el punto de vista práctico, ahora tenemos mejores instalaciones. Como si se me quemase un carro de madera y ahora tengo uno de fórmula uno. Si somos listos, deberíamos aprovechar la pandemia y que no queden residuos. Ser conscientes de que cada vez que nos enfrentemos a un desafío, aunque no tengamos respuesta, nos está ayudando a pensar. En el caso de Diálogos de Cocina, que nació con la intención de crecer y ser un espacio de compartir, en esta edición hemos mirado más hacia Latinoamérica, cosa que hasta ahora no habíamos sido capaces de hacer. Pero este año como solo había la opción online, se han apuntado miles de personas, muchas de allá: han tenido que pasar 14 años y una pandemia para lograr este objetivo.
En la nota de prensa, tu declaración dice: “espacio privilegiado de encuentro”. ¿Cómo entender la palabra “privilegio”? El interés es darle a la gente herramientas para que tengan y desarrollen una conciencia crítica. Que tengan la capacidad de pensar y repensarse, de cultivarse. No me interesa nada la provocación, sino tiene una intención de avance y mejora. No hay interés de ir contra alguien, más allá de confrontar unas ideas con otras. Lo que mejor que podemos hacer es pedirle a la gente que se esfuerce en intentar pensar y plantearse, si esas ideas que le ayudan a moverse por el mundo son las más adecuadas o no.
¿Cómo evocar un pensamiento crítico en un mundo donde, al parecer, cada vez se lee y cuestiona menos? Una vez escribí un texto que se titulaba Palabras para una experiencia, y partía de un hecho muy simple: que hay una idea, dentro de una idea, dentro de otra idea. Vivimos en un tiempo de paradojas, porque tenemos más acceso al conocimiento que en toda la historia. Es como tener la mejor biblioteca del mundo a la mano, pero no te animas a abrir un libro. Hay tal empacho o desidia que a la gente no le interesa. Vivimos en la época con una comunicación que usa la menor cantidad de letras, incluso en gastronomía.
La respuesta al trabajo del cocinero se resume en un vocablo o un gesto, que puede ser una crítica arrolladora, pero bastan tres palabras para resumir toda la complejidad de mi trabajo. El comensal lo resume todo con “un mal” o “un bien”. Entonces me dije, esto no puede ser. Hacen faltan palabras para la experiencia y profundizar en las motivaciones, lo intereses y las intenciones. Incluso articular palabras nuevas para estar a la altura de la complejidad, pero curiosamente es todo lo contrario, las guillotinamos. Por eso en Diálogos de Cocina, como pocas veces en la historia de la alimentación, nos hemos hecho preguntas y planteado desafíos a estos niveles.
¿De qué o contra qué nos quiere vacunar Diálogos de Cocina? Los virus que nos atacan tienen que ver con la simplicidad. Por ejemplo, contra la pereza. Nos ha conquistado la premura, no queremos dedicar mucho tiempo, y ha ganado la velocidad de los titulares que caducan al tiempo que llega el siguiente. Todo se ha quedado en la superficialidad, no se contrasta.
El covid 19, como virus, ha puesto el foco sobre las sombras de nuestra sociedad. Los únicos que no se han confinado son los demonios. ¿Cómo se inmuniza a la gastronomía? Es una vacunación a cucharadas. ¿Cucharadas de qué? De inspiración que ayuda, por ejemplo, a emprendimientos en el mundo rural que no creen en la importancia de su propia acción. Cada día intentamos dar cucharadas que combaten los virus de los que hemos hablado. Para ir en contra de las inseguridades y de las certezas, muchas de las cuales son otorgadas por los privilegios.
¿Cómo saltar del diálogo y la reflexión a hechos cotidianos? Para no quedarse en el mundo de las ideas. Es una pregunta difícil de responder. Por ejemplo, si tu entrenas la mente puedes estar todo el tiempo teniendo ideas y ocurrencias. Pero a partir de la idea, hay que dar un salto y profundizar sobre ella, lo cual requiere contrastar, investigar, estudiar, todo lo que se traduce en un trabajo. Pero mucha gente no lo hace y ahí está la primera pérdida. Si se supera ese paso, viene la tercera etapa que es materializar en hechos concretos aquella idea u ocurrencia original, y es donde encajan los emprendedores. Materializar es difícil.
Voy a decir algo que es muy triste, pero, ¿cuándo la gente cambia o se da el cambio? Cuando la situación es patente y no hay escapatoria. Entonces, siente que le van a penalizar sino asume nuevas condiciones. Por eso la función de Diálogos de Cocina pasa por lo menos por darle luz. No tengo tanta fe en que tengamos la capacidad de cambiar muchas cosas, pero si sabes que hay un problema que resolver y no le ponemos luz, estamos admitiendo que no va a cambiar nada. Explicamos cambios y mostramos casos que han logrado llegar a lo que tal vez te gustaría convertirte. Eso es inspirador.
¿Cuál es el objetivo de un taller que evoca la irreverencia? Comencé mi participación pidiendo perdón a todos aquellos que no logré incomodar. No se trataba de molestar, por molestar. Sino de hacer un ejercicio muy simple de ayudar a la gente a entender que a veces un hecho, una situación no es lo determinante, sino la manera en que lo traduces a tu propia vida y a tu manera de pensar. No es existen cosas buenas o malas, sino situaciones que te pueden gustar más o menos, per sé no las etiquetes de esta forma. Por ejemplo, durante el taller, el Niño de Elche tomó un objeto que vibra y se lo puso en la boca porque puede cantar con eso. Algunos vieron un consolador o un no-se-qué, esa es su mirada. Otros escucharon música y hasta un zapateo. A esto me refiero. Hay una irreverencia constructiva.
A propósito de esto, en tu ensayo sobre Los ojos de la comida (*) expresaste lo siguiente: “(…) hemos logrado establecer mecanismos de distanciamiento intelectual con lo que nos llevamos a la boca para evitar implicaciones personales con un alimento que tiene ojos que expresan emociones. (…) Ya no sirve aquel consejo de que para conocer la frescura hay que mirarle a los ojos”. Ahora es más perverso que eso. Ya no es solo que a la comida que tenía un origen identificado e identificable, le hemos cambiado la forma. Un pez sin cabeza, ni espinas es una masa uniforme, un filete, que nos lleva a inventar otros alimentos, que se parecen poco a lo que era. El salto cualitativo viene cuando por medio de las palabras corremos otro velo más. No queremos que sea solo un trozo de vaca y le ponemos otro nombre, generando distanciamiento mediante el lenguaje. Al quitarle los ojos a la comida también evitamos otros ojos que no queremos ver, como los del agricultor, las condiciones deplorables de trabajo, etc. La implicación de los ojos es muy amplia. Es un ejemplo de insostenibilidad.
Mugaritz cumple 23 años, al respecto expresaste: “el diálogo es propio del espacio”. Mugaritz es un error del sistema. Eso me lo han dicho. Me he enriquecido con las aportaciones de gente de fuera que nos han ayudado a vernos. Cuando ves nuestra historia encuentras pocos motivos que te lleven a pensar porqué ha durado tanto tiempo. No nos hemos ayudado a triunfar porque estamos ofreciendo incomodidades a la gente. La mayoría de los comensales quiere ir a un sitio y descansar, especialmente si voy a un lugar que no es económico. Entonces, si gasta mucho dinero, desea obtener mucho placer. Pero aquí el placer está en el desafío y esto es una minoría de la gente. Lo sorprendente es que hemos ido dando pasos hasta llegar a donde estamos. Lo más bonito hasta ahora es cuando otros profesionales hacen suyos otros mensajes, ideas y técnicas, y ni siquiera saben cuál es el origen. Al principio me molestaba mucho, porque hacer algo nuevo exige un esfuerzo extraordinario. Pero con el tiempo lo mejor que puede pasar es que otros avancen a partir de planteamientos o ideas hechas desde aquí.
