Un navegar por las cocinas de algunos cocineros peruanos nos sabe a evolución, avance imparable, a valoración de insumos. Desde el norte Sullana, pasado por tierras lambayecanas, hasta los sures arequipeños, la selva tarapotina, los Andes, Chinchero. En Perú hay mucho que contar: La gastronomía peruana atraviesa una nueva etapa marcada por la innovación e investigación. 

La palabra chef significa “maestro”, “jefe”. El término no corresponde a cocineros aprendices, a los que no tienen recorrido, a los que aplican mecánicamente el oficio. Ser chef tampoco implica reproducir recetas como algún despistado, con la ingenuidad con la que suele disfrazarse la ignorancia, le preguntó a la chef Pía León por qué no servía salchipapas en su restaurante. Evidentemente no es que no sepa prepararlas, sino que su cocina transita por otros derroteros.

El arte del cocinero consiste en transformar las emociones intangibles (sueños, alegrías, preguntas, entusiasmo) en algo tangible (aromas, texturas, colores). Si bien esta necesidad de innovación y creatividad puede ser más evidente en el fine dining o en la nueva cocina peruana, también se manifiesta en la cocina tradicional, el la que está presente la necesidad de mostrar una identidad de grupo, de región, de país mediante los productos propios y de las técnicas empleadas desde hace cientos de años probadas, mejoradas y adaptadas por las sucesivas generaciones.

HÉCTOR SOLÍS: CON EL PRODUCTO NO SE TRANSA

La profesionalización del cocinero exige también la profesionalización del producto. Esto lo tiene muy claro el chef Héctor Solís, propietario del aplaudido restaurante Fiesta en Miraflores y La Picantería en Surquillo. “Vivimos en un mundo donde todo se relativiza. Se busca lo más rápido, lo más sencillo, lo más barato. Los pollos y los patos son alimentados con soya, harina de pescado y antibióticos, lo mismo pasa con los pescados. El alimento natural ha sido remplazado por alimento no natural, ´balanceado´ le dicen para vender más. El nuevo orden mundial nos lleva a eso”, reflexiona Héctor con una seriedad no exenta de preocupación.

Por eso, hace muchos años impuso un cambio radical en su cocina con miras a tener productos de primerísima calidad, buscando los autóctonos, de primera mano, provenientes de pequeños agricultores. Héctor también siembra arroz para controlar el uso de pesticidas; cría pollos, cabritos y patos para abastecer su cocina y, por ende, utilizar los huevos de sus propias gallinas criadas en libertad y alimentadas tradicionalmente. Esta búsqueda de la excelencia lo llevó a rescatar una raza de pato típica de Lambayeque, de la que hoy tiene una colonia de mil aves en la granja de Conde (Recordemos que el pato criollo es una especie nativa de Lambayeque, tempranamente domesticada por los moches. En cerámicas preincas y tumbas prehispánicas se encontraron vestigios de su uso).

No puede finalizar esta mirada de su cocina sin referirse al loche. “La gente no sabe que el loche (no zapallo, como inexactamente lo llaman) que venden en los mercados viene de Huaral, Cajamarca y la Amazonía, cuando es un producto con Denominación de Origen sembrado en Pomac III y el único autorizado para comercializarlo como Loche”, dice esta vez sí notoriamente fastidiado. Este apego a la cocina lambayecana y a la costa norte del Perú condimentada con grandes dosis de inconformismo lo llevó a reinventar el hoy famoso y pirateado cebiche caliente, concebido sobre la base de las panquitas de life a las brasas de su infancia. El “apatadito”, una reconversión del clásico arroz con pato, y todos los refinados platos de origen popular que hoy sirve en sus restaurantes evidencian el puente entre la tradición y el futuro. La cocina de Fiesta es el producto.

MITSUHARU TSUMURA: DESALCOHOLIZAR, APROVECHAR LA PAPA Y LOS PECES DE RÍO

Todo el mundo lo conoce como Micha. Y cuando digo “todo el mundo”, no exagero: su restaurante Maido acaba de ser elegido como el sexto del mundo en el ranking de The World’s 50 Best Restaurants 2023 realizado en julio en Valencia, España. Siguiendo con esa impecable fusión de la cocina japonesa y peruana, Micha está investigando en tres áreas gastronómicas. La primera es el mundo de los pescados de río. No es rápido ni inmediato, obviamente.

Gastronomía peruana. Con la papa busca lograr una masa para tempura aprovechando el propio almidón del tubérculo, al tiempo de estudiar otros procesos para emplear la fécula, la piel y la pulpa.

Con el apoyo y concurso de Cindy Reátegui del magnífico restaurante tarapotino La Patarashca, trabaja en cómo utilizar en su cocina peces como el paco, la gamitana, el paiche o la doncella. “No son peces aptos para comerse crudos, hay que purgarlos porque tienen bacterias, sobre todo los que viven en cochas o aguas estancadas”, señala Micha. Dicho sea de paso, el trabajo que está haciendo Aldito Yaranga en La Patarashca es notable. Ha logrado un sedoso y sofisticado jamón de paiche, que se comercializa en Lima en La Despensa de Pedro Miguel Schiaffino, otro cocinero de amplia experiencia y pionero en la introducción del paiche y otros productos de la Amazonía en los mercados limeños.

Sigo con los temas de investigación de Micha, el segundo proyecto gira alrededor del mundo de la papa, en el que busca lograr una masa para tempura aprovechando el propio almidón del tubérculo, al tiempo de estudiar otros procesos para emplear la fécula, la piel y la pulpa. El tercero es desalcoholizar los alcoholes (whiskys, rones, sakes), para que los comensales tengan la sensación de estar tomando alcohol, pero sin alcohol.

Por eso la ceramista Roxana Artacho busca involucrarse profundamente en la propuesta gastronómica del chef antes de proponer una vajilla. “Algunos prefieren platos con mucha textura y colores fuertes, otros optan por vajilla lisa en tonos pastel, también hay los que no desean platos de forma cuadrada o redonda sino de bordes irregulares y formas caprichosas, o con kintsugi” (técnica japonesa que cubre con oro las fracturas con la intención de resalta la cicatriz en lugar de ocultarla). Formas, texturas y colores son parte de una propuesta integral, explica Roxana.

FRANCESCO DE SANTIS Y LAS PICANTERÍAS PIURANAS

Reinventarse no es cambiar de personalidad ni transformarse en otra persona sino encontrarse a uno mismo sin ideas preconcebidas, modas, tendencias o informaciones que distorsionen el pensamiento. Esto es lo que pretende hacer el sullanense Francesco de Santis. Cerró Sibaris en la pandemia y pronto abrirá Alegría, una picantería al estilo piurano con la que quiere homenajear a las picanteras de su tierra, poner en valor su cocina y generar un movimiento que conecte a Piura con Lima mediante la gastronomía. Estos dos años estuvo involucrado en absorber las costumbres, técnicas y recetas tradicionales, algunas de las cuales se han ido perdiendo con el tiempo.  Junto con Patricia Gibaja, quien lideró un proyecto en 2021 para reactivar el turismo en la región, Francesco apoyó el empadronamiento y creación de la Asociación de Picanteras de Piura que, al igual que su similar arequipeña, busca capacitar a las cocineras tradicionales para que puedan autogestionarse, dándoles herramientas para mejorar sus prácticas de manipulación, mantener cadenas de frío y mejorar sus espacios.

Piura tiene la mayor cantidad de chicherías a nivel nacional y siguen preparando la chicha con métodos tradicionales. Francesco señala que la región de Piura tiene un sinfín de disciplinas destacadas vinculadas a las picanterías como la alfarería en paja toquilla, la artesanía en madera de zapote, la cerámica de barro, las calabazas que transforman en potos, los trabajos en cuero y la joyería. “Entender las chicherías nos permite entender mejor a las picanterías”, dice.

MÓNICA HUERTA: EL CONSTANTE REVISIONAR DE RECETAS

“Nuestra manera de innovar es afirmarnos en la tradición para avanzar”, dice la dueña de La Nueva Palomino, la picantería más famosa y cotizada de la Ciudad Blanca. “Los productos de ahora no son los mismos de antes, no tienen el mismo sabor, entonces apelamos a nuestra memoria gustativa para encontrar la hierbita o la técnica que nos puede dar mejor resultado”, resume.

“La cocina tradicional es sana, natural, vistosa porque nuestros antepasados tuvieron muchos años para ir plasmando ese sabor. Por eso seguimos ccaspeando el camarón y el ají, moliendo en batán, salando el mocontullo y el charqui, asoleando ocas y maíces, germinando el maíz para hacer chicha de guiñapo, aprovechando los jugos naturales que no se oxidan y dan intensidad. Constantemente revisamos los platos, incluso los más populares e incorporamos recetas antiguas. Con camarón tenemos más de 50 recetas actualizadas y de ocopa unas 15. Las sarzas son prácticamente infinitas, porque son versátiles y se preparan con mariscos, cachetes de res, ubre, morros de cordero, patitas de chancho, lengua, criadillas, pescaditos de río, verduras. Siempre las sirvo en el restaurante como jayaris (piqueos) para que la gente tenga presente nuestra tradición”. Para qué más.

COCO TOMITA: EL TIEMPO DE LA BUENA PESCA

Shizen Barra Nikkei está formado por un joven y apasionado triunvirato integrado por Mayra Flores, Coco Tomita y Renato Kanashiro. Ellos están dispuestos a comerse el mundo para resaltar el producto y marcar la diferencia. Saben que su tarea no es a corto plazo, pero ante la poca data oficial y confiable empezaron el año pasado a registrar todas las especies marinas que iban llegando al restaurante (más de 50), producto de la pesca sostenible a vela dentro de las 5 millas hecha por pescadores artesanales.

MANUEL CHOQQUE: EL CREADOR DE MISKY OCA

Manuel Choqque es ingeniero agrónomo y pertenece a la cuarta generación de agricultores en el valle de Chinchero. Su vida y su profesión está enfocada al mejoramiento genético natural y preservación de papas nativas de las que tiene 376 variedades registradas.

Manuel tiene más de 50 líneas de investigación en laboratorio con test en tubos de ensayo y pruebas en la tierra. Está experimentando con papas, ocas y mashuas para extraer los azúcares naturales del zumo de los tubérculos, fermentarlos y lograr una suerte de  “vinos” o “vodkas” inéditos, distintos, revolucionarios. Hoy ya tiene un destilado de oca etiquetado, Miski Oca, que se sirve en los restaurantes de Virgilio Martínez y que también se vende al público.

Son muchos los cocineros dedicados silenciosamente a interpretar la cocina desde su más íntima convicción: Gastón Acurio, Rafael Ósterling, Jaime Pesaque, Virgilio Martínez, Pía León, Pedro Miguel Schiaffino, Cucho La Rosa y un largo etcétera al que se suma una nueva generación curiosa y cada vez más apasionada. Los testimonios que hemos presentado son solo el reflejo de un movimiento más amplio y profundo que involucra a creadores gastronómicos a lo largo y ancho del Perú. La cocina peruana está viva y avanzando. Corrigiendo errores y avanzando. Retrocediendo un paso para saltar tres más. Preguntándose, investigando, cuestionando, encontrándose con la realidad cara a cara para volver a empezar. Ya lo dijo el poeta Tagore: “Si cierras la puerta a los errores, la verdad también se quedará afuera”.
