A Astrid Gutsche le gusta bailar. Sonríe la mayor parte del tiempo y tiene bastante claras sus prioridades. Cuando habla de sus hijas, le brillan los ojos y el rostro se le llena de satisfacción pues sabe que están encaminadas. Astrid, respostera, y una de las creadoras, hace 25 años, de aquel Astrid & Gastón que generó un cambio en la gastronomía peruana, es quizá quien más zonas cacaoteras peruanas conozca en el país. Intrépida y curiosa, sus recorridos intensos la llevaron a entablar amistad con gente maravillosa y a plasmar luego sus historias en un libro llamado Los Guardianes del Cacao. Hoy sigue creando: en la reciente cena por el aniversario de su restaurante soprendió con una esfera de manzanilla con queso de cabra, miel, polen. Delicada, divertida, como ella; una unión de técnicas, de tradiciones, de insumos. Esta vez nos hace un repaso de su vida, de cómo se enamoró de Perú, de aquello que le gustaría que cambie. De ese día a día que vive sin proyectarse. Soluciondo problemas en el inmediato.
Retrocedamos un poquito. Volvamos al cambio de casa, que es un quiebre importante en estos 25 años. A parte, dejar algo… es como tu bebé. Veías cada cosa, se rajaba una pared y tenías que arreglarla, la iluminación, era todo, tú has creado esa personalidad. Acepté que en ese lugar no se podía seguir creciendo, habían construido edificios gigantes, la calle se achicaba. Y cuando hablo de crecer, no hablo de tamaño, sino de mejorar las cosas: en el antiguo A&G había un congelador en mi oficina porque no quedaba espacio dónde meterlo, la máquina al vacío estaba en el pasillo. La modernidad se estaba comiendo Cantuarias. Obviamente, dejar esa casa era como abandonar una parte tuya, pero también quien ve la Casa Moreyra se olvida muy rápido porque es una belleza. Quizá irnos a otro lugar me hubiera costado más… pero cuando tuve la Casa Moreyra no lo podía creer, a parte es un monumento histórico. Costó dos años remodelarla, es una joya, una parte de la historia del Perú.
En uno de los eventos por los 25 años, Gastón mencionó que allí se había realizado una recepción para el Libertador José de San Martín, organizado por doña Rosa Gutierrez de Cossío, Condesa de San Isidro. Exacto, imagínate, por eso digo que es una joya histórica y eso se siente, es algo que a veces la gente no entiende, pero sí se siente.
Esa responsabilidad de trasladar el espíritu de un lugar que ya se quedaba pequeño, pero tan querido por muchos, ¿te daba miedo? Claro, porque en el otro local la gente se enamoró de la casa, del bar, y eso que hasta ahora seguimos trabajando con muchas personas que nos han acompañaron desde el inicio. Tienen 25 años con nosotros y la misma energía. Siempre que estoy, hago lo mismo que ellos, entro a cocina, saco pedidos, atiendo mesas. Eso realmente te hace sentir que trabajas en familia y es lo bonito.
¿Te gusta mucho la parte del servicio? Sí. Estudié cocina, luego pastelería, estudié vinos, o sea estudié de todo en verdad y me encanta todo, y cuando empezamos a trabajar, pues Gastón estaba en la cocina y yo en pastelería. Después entré a encargarme del servicio, porque el primer trabajo que tuve a los 16 años fue de moza en un restaurante. Me acuerdo que le pusieron una multa porque me faltaban cuatro meses para cumplir 18 años. Me gusta el servicio porque ahí te das cuenta que es más profundo: te puedo dar la mejor comida, pero si el servicio es frío, ya no sabe rica.
Y tienes que encontrar ese equilibrio entre lo divertido y no pasar el límite,ser un poco psicólogo. Obvio. Por ejemplo, ayer justo se habían juntado tres mesas aburridas, se notaba que eran aburridas y teníamos que ver cómo sacarlos de esa onda. Con los años no más te das cuenta de esas cosas.
¿Cómo compaginar? Mañana pastelería, noche atendiendo sala, es bastante demandante. Sí, pero en verdad encontré un poquito mi forma de trabajar. En Chacarilla tengo un taller de producción donde hago todos los postres para el Tanta y un pequeño espacio en donde trabajan los que yo llamo jefes de pastelería. Me encanta porque formé un grupo muy simpático. Tengo al jefe que es Marco Guima, un chico muy organizado además de creativo, tiene mucho mundo, es genial para ser jefe de cocina. Luego Isai Cruz, fue muy gracioso cómo lo conocí, sino me equivoco fue en Mistura, había una competencia de pastelería y lo mandan a España y yo quería que trabaje conmigo porque tiene un paladar increíble y una fineza al momento de hacer las cosas. Está Elizabeth, tiene mucho sentimiento, pero además es muy capa, ve el postre primero y se fija cómo servirlo, en qué plato y contacta a los que diseñan la vajilla. Doris: cuando hay algún problema, ella hace que todos se quieran de nuevo. Y Rosa, que es de toda la vida, para mi Rosa es una enciclopedia de los postres tradicionales peruanos.
Me hablas de personajes que han crecido formando un grupo de manera orgánica. Se ha ensablando un equipo potente. Tan completo, porque está el creativo, el moderno, la que tiene mucha sensibilidad, la que pone orden, la que tiene toda la historia. Es perfecto. De repente, quizá, puedo contar más sus historias, me culpo de no hacerlo, pero trabajan tantos años conmigo que a veces tienes que tomar distancia para darte cuenta nuevamente de lo maravillosos que son, son tus aliados, porque sola no se puede. A veces llegan nuevos jefes de cocina al restaurante y tengo que llevarles a ver cómo funciona este grupo en el que todos se complementan.
GUARDIANA DEL CACAO
Ese amor, esa entrega por el chocolate que se refleja en tu libro Guardianes del Cacao, ¿cuándo comienza? En realidad de manera inconsciente, de muy chiquita. Mis dos papás eran muy chocolateros. En casa había entre 20 y 30 tabletas, crecí con chocolate y creo que no hay un solo día hasta ahora que no lo haya comido. Cuando tu empiezas a probar tabletas, te das cuenta de que el efecto de satisfacción de los bombones (que son más dulces y no tiene nada de malo) es corto. El otro dura más. Cuando catamos pasta de cacao, es lo más puro. Entonces, el chocolate hace que la pasta de cacao, o sea que este chocolate de origen, se vuelva reconfortante, sin quitarle la travesura y la personalidad. Es justo lo que hace que más gente lo pueda apreciar. Además, es muy complicado de trabajar, porque se corta cuando está frío, se corta cuando está caliente, se corta porque no lo envuelves bien. Como soy una persona a la que le atrae todo lo complicado, donde está lo más complicado, ahí voy. Cuando Usaid (Agencia de los Estados Unidos para el Desarrollo Internacional) me contactó porque necesitaba una vocera para el chocolate, me llevan por primera vez a San Martín y comienzo a conocer el chocolate con las comunidades y me empiezo a enamorar de todo.
¿Qué tan difícil fue ese acercamiento con los cacaoteros cuando te contaban sus historias? Mis papás viabajan muchísimo. He vivido en Marruecos, India, Túnez, Sudáfrica. He visto muchísimo, las vidas de luchas… y tengo que agradecer que me hayan sensibilizado con mi entorno.
Cuando recorrí las zonas cacaoteras de San Martín la primera vez, las historias eran impactantes, muchas de ganas de cambio. Te quedas sin voz ante lo que te cuentan. Es muy fuerte, sobre todo cuando te dicen que se llevaban a tu hijo una mañana y nunca más regresa. Que solitos se encargaban de sus campos. Se te pone la la piel de gallina y piensas que tu te salvaste, que es injusto que ellos estén cargando con esa mierda.
Y luego la crítica. Cuando llega Usaid entra con el CCN51 (híbrido de clones universales bastante aromáticos), que crece rápido y tiene poca merma. Muchos agricultores aceptan cambiar los cultivos de coca por el cacao, pero en ese entonces no se sabía que por polinización rápida podía contaminar a los cacaos de origen, que ahora se cotizan mucho mejor, solo que era una solución efectiva. Mira, todas las cosas en la vida tienen momentos propicios y por más que no seas decisiones perfectas, hay que actuar y, a veces, la rapidez es más importante que la herramienta. Al final vas a lograr un cambio. Entonces, si hay todo este problema, si nos íbamos a pasar discutiendo dos años más cuál cacao usar porque no teníamos la experiencia, ¿te imaginas? La intención fue buenísima y el cambio fue notable. Sí, después nos dimos cuenta que el CCN51 no fue siempre bueno para toda la tierra, y puede ser que desmineralice, pero en este momento estaba bien, lo cual no es criticable. Le cambió la vida a muchas personas. Ahora estamos en otro momento y hay que amoldarse. Lo anterior nos hizo aprender.
Creo que eres la persona que ha recorrido más campos de cacao en el Perú. ¿Mapeaste todo? ¿Cómo vives toda esa experiencia, como la internalizas y la aplicas en tu trabajo? El cacao no era un producto interesante, el cultivo de coca lo era más y es por eso que en muchas zonas se dejó la genética nativa del cacao intacta. Estoy segura de que aún no conocemos la inmensidad de variedades que tenemos. En cada viaje he encontrado diferentes, hasta una que se le llama Cascarita, que era como un huevo, súper suavecita, la apretas y sale el cacao. Hasta ahora no aparece en ningún libro, pero ahí está. En esos viajes te das realmente cuenta de la calidad de los suelos y microclimas que tiene el Perú, que cada región tiene cosas increíbles, pero que a veces por desesperación, porque el gobierno no ayudó, no se conocen ni aprovechan.
LAS OPORTUNIDADES, LAS POSIBILIDADES
Me prepcupa ver cómo este mundo de la gastronomía, que es tan amplio, trasversal, tan antropológico, filosófico, literario… se reduzca a un momento en la mesa: cuando comes. A lo que puedas postear en Instagram. Donde siempre se omite la parte esencial: el campesino, el producto, que es de donde viene todo. A mí también, créeme. Los cocineros ayudan a difundir el mensaje y cuando tienen algo de renombre es más fácil que llegue a más gente. Pero para ser conocido, los clientes esperan cierto tipo de estándar. Y luego cuando ves a una clientela que viene con esas expectativas, que son muy duros contigo porque te castigan, y cuando ves que lo único que quieren es mostrar sus fotos en Instagram para que sean más conocidos y tal… piensas, entonces todo lo que te conté, ¿no te importó? Es frustrante. Solo hay algunos que sí cuentan esa historia y entonces te alegras de nuevo. Y dices ok, es un porcentaje mínimo, pero si ese cliente lo ve, aunque sea un porcentaje mínimo, se puede hacer algo.
A estas inquietudes se suma la de la mujer en la cocina. Sí, ya sé que es un tema manido, pero, ¿cómo ves tú ese trabajo? En todos estos años, ¿sientes que la mujer ha reforzado su visibilidad, su presencia? Por temas históricos, el hombre ha podido conquistar más el tema laboral mientras que la mujer se quedaba en su casa, y esto no le hacía peor o mejor cocinero a ella o él. Es normal que haya menos cocineras en restaurantes por lo demandante que es. La mujer ha tomado un poco ese camino porque por encima de todo están sus hijos. Una decisión muy valiosa. La injusticia ocurre cuando hay obligación. Creo que en Europa las mujeres tienen más facilidades. Creo que las multinacionales, todas, deberían de tener un jardín para que las mamás que trabajen en sus empresas tengan a sus niños en un lugar cercano y que además estén tranquilas. A mí no me importa trabajar 16 horas siempre y cuando mis hijos estén cerca y bien. Y una forma de motivarlas podría ser que no paguen tantos impuestos si implementan este tipo de infraestructura, porque están haciendo algo que quizá el gobierno no hace.
Es irónico que toda nuestra comida tradicional venga de las mujeres, pero que para los medios todo lo hagan los hombres, ¿no? Ha cambiado un poquito y me encanta ver la historia que tiene Pía (León, Kjolle) ahorita. En realidad lo que está haciendo no es solo para ella, sino para muchas mujeres que vienen detrás. O la fortaleza de Cinzia (Repetto, El Bodegón) y la de Martha (Palacios, Panchita). Ahora, hay algo que sí es cierto, mientras la mujer no tenga un apoyo estatal para cuidar a sus hijos, no va a trabajar tranquila. Si yo no hubiese tenido el soporte de Marlene, a quien le agradezco mi vida simplemente, no hubiera podido hacer nada de lo que he hecho. Tuve suerte, porque el primer restaurante que pusimos producía suficiente dinero para poder pagar a una persona que cuide de mis hijas. Entonces, podemos hacer todo para visibilizar a la mujer, hacer campañas, marchas… pero si el Estado no se involucra … Una mujer independiente, créeme, es capaz de todo, porque a la primera que algún hombre la fastidie, se quita, porque tiene un poder económico para poder hacerlo. Entonces, ¿cómo hacemos? ¿Cómo hacemos que la mujer sea independiente? Ayúdala con sus hijos.
Además, se crían niños fuertes y con convicciones mucho más claras. Exacto, suena feo, pero es nuestra sociedad. Ojalá que de acá a 200 años la problemática sea otra y todos seamos iguales, pero si el Estado no invierte hoy en cunas de extraordinaria calidad para que cuando el niño salga pueda entrar a cualquier colegio, sea privado o estatal, la mujer siempre va a preferir cuidar a sus hijos. No estamos llegando a la raíz del problema, tan simple como eso. Si a una mujer le das la posibilidad de desarrollarse profesionalmente, hacer algo que sueña, ser una persona reconocida, eso va a aumentar su autoestima, va a educar de manera diferente a sus hijos.
Darles las herramientas para que sepan cómo protegerse. Creo que todo acá tiene que ver con la educación. A ver, en educación incial, me acuerdo clarísimo la clase y nunca me voy a olvidar. Estaba la profesora y viene con un dibujo en una cartulina de dos hombres, uno en terno y el otro tenía el pelo negro cochino y los dos mirándote y nos preguntaba: si alguno de los dos te da un caramelo, ¿de quién lo recibes?” Teníamos que contestar de ninguno. Nos enseñaban que no debes confiar en nadie. No me enseñaban a cantar el himno nacional sino a defenderme. A los cinco años sabía que no tenía que hablar con nadie, que si estaba en la calle y alguien me hablaba o seguía, tocara la puerta de primera casa con luz prendida que viese (en estas épocas). Pero es lo que no están aceptando enseñar ahora, porque dicen que es “ideología de género” y no quieren dejar que se meta en la currícula.
EL CAMINO POR SEGUIR
¿Te imaginabas lo que iba a pasar con Astrid & Gastón cuando comenzaste? Para nada, en lo absoluto. A parte, y no sé si es bueno o malo, para mí todos los días son diferentes y tengo un problema con planificar. Me levanto guerrera y digo “qué vamos a arreglar hoy”. Me da hasta gusto levantarme así. Siempre he tenido un serio problema en planificar. No me angustio cuando me salen mal las cosas, es más, me río de mí misma. Soy una persona que aguanta bien el bulling de mis amigos. Me considero no ser dueña de la razón, me gusta escuchar y adaptarme. Jamás he podido proyectarme.
¿Te sientes más libre así? Me preocupa menos. Es como que siento que lo que tengo que hacer mañana sí lo puedo controlar. Lo único seguro es que todos los días me levanto y trato de hacer bien todo lo que puedo.
