Empezó en la mesa del restaurante Siete y luego migró al negocio propio junto con su pareja en Pasta.pe, un emprendimiento pequeño donde la insignia es el producto fresco nacional y las elaboraciones caseras. Durante varios años Alessandra Ribeyro se preparó para tener un espacio propio donde se pudiera tomar un buen café y comer un postre bien hecho. En 2011, después de salir del Cordon Bleu pasó por la pastelería del Swissôtel y el Taller Pâtisserie, pero el sueño se cumplió cuando abrió La Teoría de los 6 Cafés. Durante un par de años, dedicada al ciento por ciento al negocio creó pastelería fina, brownies, tortas, galletas usando productos naturales y aplicando técnicas estadounidenses y francesas en su ejecución. Creó donuts de masa suave, sin grasa y dulzor controlado, hizo queques veganos con masa húmeda y miga firme, se aventuró con castañas amazónicas y chocolate del VRAE, hasta que llegó la noche y conoció el infierno. El covid 19 la obligó a cerrar su local y luego de casi tres interminables meses de desconcierto e incertidumbre, un día pudo reabrir las puertas y comenzó con “la nueva modalidad”: salón reducido, taller incorporado y nueva carta a tono con los tiempos. Su carrera, especialización y práctica rinde culto a la repostería francesa. Estudió en la San Ignacio, luego en Ecole Lenôtre (Francia) y finalmente en el Instituto Paul Bocuse. Con esa batería de conocimientos en las manos abrió en 2016 Madame Kintu, nombre que rinde homenaje a sus dos países de referencia: Perú y Francia. Con un guiño: kintu es un anagrama de tunki (gallito de las rocas en quechua) y además significa ofrenda, pago a la tierra, agradecimiento. Héctor hace pastelería creativa, postres boutique, tortas en capas. Juega con texturas, rellenos, volúmenes. Con los trastornos de los últimos tiempos, cerró provisionalmente su local en Miraflores y se quedó con su taller en San Miguel. Allí sigue produciendo pastelería de vanguardia, pero le agregó tortas y tartas, quiches, brioches, pan de masa madre.
